Ali here! Whether I like it or not, I travel often. Travel of any kind puts stress on the body - mine included - and over the years, I have learned through trial and error and listening to my body just how important it is that my meals are "clean" and immune supportive. Yep, it does take a little more time, effort and energy but I’ll tell you this...I have never once regretted it and truth be told, it makes traveling more enjoyable because I feel good and am able to be more present.

While this is now “a no brainer” for me, while I was eating dinner last week at the airport amongst all of the fear, stress and anxiety COVID-19 has brought about, I felt the importance of revisiting the impact food has on our health.

Almost 80% of our immune system lives in our gut. Let’s break that down a little further. What are two things that come in direct contact with our gut? Food and beverages. If we’re trying to support our immune system and almost 80% of our immune system resides in the gut, doesn’t it make sense to eat foods and drink liquids that our bodies can use to protect us from viruses and pathogens? (Insert a resounding YES!)

Right now, we have so many clients at The Spring asking what supplements they should be taking for protection against the Coronavirus. While supplementing with vitamins and minerals is absolutely recommended for additional support, remember that EATING your vitamins and minerals is VITAL and the best way to support your immune system. Why?

In the 1950s, Dr. Royal Lee wrote several articles which pointed out that if your immune system was weak due to diet and lifestyle, you are especially susceptible to viruses, like the Coronavirus. He was criticized because he emphasized that the body’s immune response hinges on what we eat. But we know that “vitamins do not exist as single components but as parts of a complex of compounds.” Whole foods (i.e. foods in their true, original form) are naturally made up of these complex compounds and when paired together act as catalysts and co-factors for better absorption, utilization and efficacy in the body. Meaning, eating the whole food will get you the biggest bang for your buck!

I strongly encourage you to read the article below for a better understanding of how food affects our health and more importantly how food can protect and support you during this time. In the meantime, for inspiration, here are some of the vitamins, minerals and nutrients I ate while waiting for my flight:

No doubt about it, there is much uncertainty and anxiety circulating at this time. Studies have shown that as we read the news, our anxiety increases which weakens the immune system. So, we are now faced with the challenge of staying informed so we can take preventative measures yet preventing the fear of taking over.

Tapping (aka EFT or Emotional Freedom Technique) has been used by thousands of therapists, nurses, social workers, psychologists, doctors and individuals with exceptional results, especially around releasing limiting beliefs and navigating times of high stress.

The intention of tapping is to help you release anxiety so that you can support your immune system, feel more at peace, and feel empowered to take any steps necessary to protect yourself. Here is a link to a guided tapping exercise by Julie Schiffman that’s specific to easy anxiety around COVID-19. Additionally, the diagram shows the progression of various acupuncture points that are tapped during the Emotional Freedom Technique.

A quick, easy and satisfying Saturday lunch to try. Tahini (sesame seed paste) has my heart! It has an earthy taste and creamy texture that’s perfect drizzled over veggies or a salad. Not to mention it stores well so you can make a big batch and use throughout the week. There are several variations but the simplest is included below. Enjoy!

"My kitchen is filled to the brim with food for the month...now what?"

Here's an easy meal (good for breakfast, lunch or dinner) to try with some foods you may currently have in your kitchen. Watch through for a restoring reminder we encourage you to keep in mind.


Ali's "Get Creative and Use Whatever You Have In Your Kitchen" Shakshuka:

- 1 onion, diced
- 4-6 cloves garlic, diced
- 1 jar pasta sauce
- 6 eggs
- 1 cup mushrooms
- 1 bell pepper (diced)
- 2 handfuls of greens
- 1 tsp red chili flakes
- Salt + pepper to taste

* Swap out the mushrooms, bell pepper and greens for whatever veggies you have available. Some ideas: zucchini, squash, Brussels sprouts, broccoli, asparagus, etc.
** Additional spices to try: oregano, thyme, Italian seasoning, bay leaf

Ali here! I was in Florida again this week as I’m working towards completing my certification in the advanced training in Nutrition Response Testing.

I received several questions about what I was going to do with all of the Coronavirus scares. Here are some steps I took to protect not only myself but also others:

* 1: Stayed calm and present
* 2: Avoided sugar and grains (BTW these are two of the biggest ways to suppress your immune system!)
* 3: Prioritized sleep
* 4: Got outside in the sunshine for (at least) 20 minutes
* 5: Made it a point to get to the beach for some grounding
* 6: Ate my vitamins and minerals through whole foods
* 7: Took a couple of extra immune supportive supplements

Daylight savings comes to a tragic end tomorrow, Sunday, March 8th, and once again my internal clock will go haywire and I will feel the effects of one little hour for a good couple of days. My husband laughs at the way I can travel the globe and deal with 14 hour time changes with a shrug of the shoulder but that one little hour will floor me.

While an hour may not seem like a lot, the time shift can have significant effects on our body including sleep cycles, hormone levels and digestion and studies have shown that there is a dramatic increase of heart attacks and car accidents the day after the time changes.

Because the light shifts during daylight savings time, your natural circadian rhythms are disrupted and your body can make hormones at the wrong time of day which may lead to a long list of symptoms like fatigue, depression, irritability, anxiety, etc. Fortunately, there are some ways you can support your body! Elke Kniss, PA, CCN started her medical education in Germany as a Physician’s Assistant. It has given her the opportunity to work in the medical field both in the U.S. and Europe for more than 25 years. She is is a Certified Clinical Nutritionist, CCN and has a BS in Natural Health Science and Clinical Nutrition and is graduate of the Advanced Clinical Nutrition Training of the Ulan School using Nutrition Response Testing, NRT. She studied with Dietrich Klinghardt, MD., and has completed ART I, II, and III. She also studied with Dr. Eric Berg the principals of Body Restoration Technique, BRT, for Hormone Balancing and Weight Loss, and Dr. Bob Marshall's QRA testing, and Systems Strength Analysis testing. She is trained in EHF acupuncture treatment. Elke offers BioMeridian Assessments with the state-of-the-art Bioelectrical Impedance Measurement, BIM, designed to measure 58 different electrical “circuits” in the body related to specific organs and systems. She is specialized in lymphedema and wound care services and has pioneered lymphedema therapy in Austin, Texas with the opening of the Lymphedema and Wound Care Clinic of Austin in 1994 with a satellite clinic in Houston. She is certified in Dr. Vodder’s Manual Lymph Drainage (M.L.D.) as well as Compression Physical Therapy (C.P.T.).
