Who doesnāt love a pasta salad? This bacon, broccoli and chive salad was the perfect solution for a light dinner. I used chickpea pasta to boost the protein and the Dijon vinaigrette did not disappoint. This would be perfect for a bbq side as well!

Do you ever have a craving for a specific food? That was me today with this tuna poke bowl! This could be your bodyās way of telling you it needs a specific nutrient. Lean into those healthy cravings and listen to your body.
This isnāt me giving you permission to eat a pint of ice cream or a box of junk. This is me telling you to pay attention to your body when you crave foods like leafy greens, fish, or beef. Our bodies are so intuitive and will tell you when they could be running low in certain minerals or vitamins!
Want a quick, easy meal for next taco Tuesday? Fish tacos!! I put some Mahi in the air fryer at 380Ā° for about 10 minutes and made lime cilantro slaw to throw on top. Cabbage is a PREbiotic food that feeds the good bacteria in our gut. This slaw also has Greek yogurt in it which has PRObiotics, which also help the gut lining and overall microbiome.
* 1Ā cup plain Greek yogurt*
* 1/2 cup tightly-packed fresh cilantro
* 1/4 cup freshly-squeezed lime juice
* 1/2 teaspoon ground cumin
* 1/2 teaspoon fine sea salt
* 1/4 teaspoon freshly-cracked black pepper
* 3 green onionsĀ (just the green parts)
* 2 garlic cloves
* (optional) 1 jalapeƱo or serrano pepper, stemmed and cored
* 1 (14-ounce) bag cole slaw mix*Ā (about 7ā8 cups)
1. Combine the Greek yogurt, cilantro, lime juice, cumin, salt, black pepper, green onions, garlic and jalapeƱo (if using) in a blender or food processor*.Ā Pulse briefly a few times until the mixtures is combined.
2. Place the cole slaw mix in a large mixing bowl.Ā Drizzle the sauce on top of the cole slaw, then toss until the mixture is evenly combined.Ā Season with extra pepper and/or lime juice if needed.
3. Serve immediately, or cover and refrigerate for up to 24 hours.
These chicken burgers were SO tasty! I pan fried them in ghee and placed them on a bed of spring mix with quinoa, pepperocini, kalamata olives, roasted bell peppers, and feta cheese. Drizzled some olive oil and balsamic glaze on top for dressing.
I love buying protein like this in bulk from and adding veggies on the side. Makes for fast meals and saves you money at the grocery store.
Using up some veggies I had hanging out in the fridge. Adding salmon for some major protein. One piece this size comes in around 37g š± That amount will help me stay full until dinner and provide my body with the building blocks it needs. This salmon also provides fatty acids for skin, joint and hair health!

Mahi Mahi, oven āfriedā okra, and roasted potatoes on the plate tonight! Weāre trying to avoid gluten and dairy right now so the okra is coated with coconut flour and corn meal. I marinated the Mahi with olive oil, smoked paprika, garlic salt, Himalayan salt and pepper and pan fried in the cast iron skillet. Loved turning this meal thatās usually fried into a lighter version!
Temps are finally below 90Ā° here in TX and that calls for soup! This white chicken chili from is not only inexpensive and easy to make, but delish!
There is a great balance of protein(chicken), fiber (beans) and fat (avocado) to this dish that will help that blood sugar.

What a delicious dinner! Asian glazed salmon, coconut sushi rice, and asparagus. I also used nori (seaweed) to make little sushi wraps.
Seaweed has iodine, which is essential to the thyroid gland and hormone production. Seaweed is the highest source of iodine, but can also be found in cod, dairy, shrimp, tuna, and eggs.
I love making bigger breakfasts on the weekends. Hubby was craving French toast, so I went to work! I used sourdough bread, served some chicken sausage on the side and sprinkled some berries on top. Such a yummy breakfast!

Such a nice night for dinner on the patio! We had this bacon wrapped chicken in the freezer so I made an Italian chopped salad. Easy, light dinner for a Friday night!
Italian dressing:
- 1/2 cup light olive oil
- 1/4 red wine vinegar
- Tbsp honey
- 2 Tbsp lemon juice
- 2 cloves garlic, minced
- tsp Dijon mustard
- Oregano
- Salt & Pepper
Spent the afternoon prepping freezer meals for my dad. Tomato basil soup, chicken enchilada soup, baked ziti and chicken spaghetti are ready to go!
Growing up, we had āevery man for himself nightsā where my mom WAS NOT cooking and we ate leftovers. I guess this is why I donāt mind eating them as an adult. Iāve carried that principle and creativity with me and now I run with it! This meal was made from leftovers from this week:
- shredded cabbage (from taco bowls, just added mayo, feta and Buffalo sauce and made a slaw)
- Chicken thighs (from pasta primavera)
- Buns (hamburgers)
- Vegetable medley (from yesterday lunch)
- Apples (leftover snack)
Donāt be afraid to get creative in the kitchen and mix things up š¤Ŗ
Buffalo sauce is probably my favorite condiment. So I bathed my chicken nuggets in, threw them on a salad and topped it off with dairy free ranch. Spoiler: it tastes just like ārestaurant ranchā š
Happy Labor Day! Between the holiday weekend and college football starting up (WHOOP šš»), alcoholic beverages were consumed. Iām doing my liver a favor and drinking some dandelion tea, which enhances liver function and helps with detoxification. A happy liver leads to better bile production, which helps with digestion!
