INGREDIENTS
1 and 1/2 pounds beef chuck roast trimmed of excess fat and cut into 1-inch pieces
Fine sea salt and freshly cracked pepper
3 tablespoons olive oil divided
1 medium yellow onion peeled and diced
4 cloves garlic minced
2 large carrots peeled and cut into 1/2 inch pieces
2 ribs celery sliced in half lengthwise, then cut into 1/2 inch pieces
8 1/2 cups beef stock or broth (low sodium) divided (Note 1)
2 tablespoons tomato paste
1 pound Yukon gold potatoes peeled and cut into 1/2 inch cubes
2 beef bouillon cubes*
1 and 1/2 teaspoons Worcestershire sauce
1 tablespoon fresh thyme leaves (or use 3/4 teaspoon dried thyme)
2 bay leaves
3/4 cup pearl barley
1 and 1/2 teaspoons white sugar
3/4 teaspoon EACH: dried basil, dried oregano
1 can (14.5 ounces) fire-roasted diced tomatoes
Optional: fresh chopped parsley, crusty loaf of bread
INSTRUCTIONS
Cube the beef and then pat dry with paper towels. Generously salt and pepper all the sides.
Heat 1 tablespoon oil in a large skillet or pot over medium-high heat and once it's shimmering, add the beef cubes (in one even layer; you can do this in batches to not overcrowd the meat). Sear for about 15-20 seconds per side (about 1 minute total) and then transfer the beef to a large slow cooker.
Turn heat down to medium-low and add the remaining 2 tablespoons of olive oil. Add the onion and saute for 2 minutes. Add the garlic and saute for 30 seconds. Next, add in the carrots and celery and continue to saute, stirring occasionally for 5-8 minutes.
Turn the heat up to high, add 1 1/2 cups of beef stock (or red wine), and scrape any browned bits up from the pan. Stir and simmer for 3 minutes and then pour the veggie mixture into the crockpot.

🐓🥦Chicken Broccoli Alfredo Roll Ups
These chicken alfredo roll ups are an easy, creamy, dreamy and down right delicious meal you most definitely want to add to your menu! These reheat beautifully and are pre-portioned which makes them an amazing meal prep recipe too🙌
🥦Ingredients:
2 Flatbreads
2 tbsp butter, melted
2 tsp garlic
💚Filling:
1 Rotisserie Chicken, shredded
2 cups broccoli, steamer and chopped(you could use the frozen steam in bag or fresh)
1/2 cup, part skim ricotta
1 cup Alfredo sauce
1/3 cup shredded parmesan
Salt
Pepper
Garlic
1/3 cup Alfredo sauce
1 cup mozzarella, shredded
2 strips bacon, crisped and crumbled
Basil, chopped
🔥Directions:
1. Preheat oven to 400 and oil dish of choice, I used a cast iron skillet
2. Add all filling ingredients to a bowl and mix well
3. Combine garlic and butter and brush over both sides of both flatbreads.
4. Add half the filling onto each flatbread and spread in an even layer corner to corner.
5. Roll tightly and cut in to four equals sections. Place in dish and bake for 20 minutes .
6. Once golden brown remove from oven and drizzle on alfredo. Add on mozzarella and bacon crumbles and return to oven for 5 minutes or until cheese is melted and bubbling.
7. Top with fresh basil and enjoy!

Ingredients:
• Olive oil
• 1 pound crimini mushrooms, sliced
• 1 pound shiitake mushrooms, sliced
• Salt
• Black pepper
• 4 tablespoon unsalted butter
• 1 small onion, finely diced
• 4 cloves garlic, pressed through garlic press
• 1 tablespoon fresh thyme leaves, divided use
• 1 teaspoon Italian seasoning
• ¼ teaspoon white pepper
• ½ cup dry sherry
• 3 ounces all-purpose flour (about 10 tablespoons)
• 6 cups warm chicken broth/stock
• 1 cup heavy cream
• ½ teaspoon soy sauce
Preparation:
- Place a large soup pot or Dutch oven over high heat; drizzle in about 3 tablespoons of the olive oil, and once hot, add in about ⅔ of the sliced mushrooms, reserving ⅓ of them for a moment.
- Add in a small sprinkle of salt and black pepper, and saute the mushrooms for about 8-10 minutes, until their liquid evaporates and they are browned; remove these mushrooms from the pot, and reserve them until the end.
- To this same pot add another 2 tablespoons of olive plus the butter, and once melted, add in the diced onion and the remaining ⅓ of raw sliced mushrooms, and saute for about 6-8 minutes until softened and browned, and the liquid has mostly evaporated
