Never defrost chicken on the counter. Bacteria multiply rapidly at room temperature.

Here are 6 safe methods:

❄️ 1. Fridge overnight - safest; keeps chicken ready to use for 1–2 days after thawing

Curl up with this delicious chicken soup this winter.

Ingredients
β€’ 2 cups leftover shredded chicken
β€’ 1 1/2 tablespoons olive oil
β€’ 1 small onion, chopped
β€’ 1 celery stalk, thinly sliced
β€’ 3 m cloves garlic, finely chopped
β€’ 1 teaspoon salt
β€’ 1/2 teaspoon freshly ground black pepper
β€’ 350g baby potatoes, scrubbed and cut into 1/2-inch pieces (about 2 1/2 cups)
β€’ 6 cups chicken broth
β€’ 1 can diced tomatoes
β€’ 1 cup frozen vegetable mix

Method
1. Heat the olive oil in a large pan medium heat. Add the onions and celery, and cook, stirring occasionally, until softened, about 8 minutes. Add the garlic, salt, and pepper and cook, stirring often, until fragrant, about 1 minute.
2. Add the potatoes, stir in the chicken broth, and bring to a boil over medium-high heat. Cook, stirring occasionally, until the potatoes are fork-tender, 5 to 7 minutes.
3. Add the shredded chicken, canned tomatoes, and frozen vegetables. Return to a simmer over medium-high heat and simmer, stirring occasionally, until heated through, 3 to 5 minutes. Serve.

Never cut into chicken straight off the heat.

Let it rest for at least 5 minutes after cooking.

Why? The juices redistribute throughout the meat - cutting too early lets them pour out onto the board instead of staying in your chicken.

Delicious Garlic Soy Chicken Feet

Ingredients
β€’ Sable Chicken feet
β€’ Garlic
β€’ Ginger, grated
β€’ Soy sauce
β€’ Vinegar
β€’ Oyster sauce
β€’ Sugar
β€’ Water
β€’ Oil for frying

Method
1. Prep the chicken feet - Wash the chicken feet well, then cut off the nails/claws.
2. Boil to clean and soften - Add the chicken feet to a pot of water and boil for a few minutes to clean them and remove impurities. Drain and rinse.
3. Fry the chicken feet - Heat oil in a pan and fry the chicken feet until they get a bit of colour and texture. Remove them from the pan and set aside.
4. Build the flavour base - In the same pan, fry the garlic, ginger, and chilli if using. Cook until fragrant, but don’t burn the garlic.
5. Add the chicken feet back - Return the chicken feet to the pan and toss them through the garlic and ginger.
6. Make the glossy sauce - Add soy sauce, vinegar, oyster sauce, sugar, and a splash of water. Stir well so the feet are coated.
7. Simmer until glossy - Let everything cook down until the sauce thickens and becomes sticky and glossy. Add a little more water if needed, then reduce again.
8. Serve hot as a snack, starter, or with sadza/rice if you want to turn it into a meal.

Quick tip
For extra depth, add a little black pepper or a pinch of paprika while the sauce is reducing.
