Crispy Sweetcorn & Herb Fritters
Simple snacks can still feel comforting and satisfying.

Serves 4
1 Serve = 2 CC + ¼ Protein
Best Choice Recipe

Ingredients
• 200g (1 cup) sweetcorn kernels
• 2 spring onions, chopped
• 1 egg
• 120ml (½ cup) self-rising flour
• 30ml (2 tbsp) low-fat yoghurt
• Chopped parsley
• Black pepper

Method
1. Combine all ingredients.
2. Heat a non-stick pan.
3. Spoon small amounts into the pan.
4. Cook until golden on both sides.
5. Serve warm.
