🍋When Life Gives You Lemons… Make Donuts!
Ingredients
Dry Ingredients:
• 210 g all-purpose flour
• 30 g cornstarch
• 1½ tsp baking powder
• 1 tsp salt
Wet Ingredients:
• 150 g sugar
• 1 tablespoon grated lemon zest
• 28g melted butter
• 2 large eggs
• 180 g buttermilk
• ½ tsp pure vanilla extract
• 1 tablespoon freshly squeezed lemon juice
For the Glaze:
• 200 g icing sugar
• 2–3 tablespoons freshly squeezed lemon juice

Instructions
1. Preheat your oven to 175°C (350°F). Lightly grease your donut pan or spray it with non-stick spray.
2. In a large bowl, combine the sugar and lemon zest. Mix well to release the lemon fragrance.
3. Add the melted butter to the sugar mixture and stir to combine.
4. Beat in the eggs, one at a time, mixing well after each addition.
5. Add the buttermilk, vanilla extract, and lemon juice. Stir until fully blended.
6. In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt.
7. Sift the dry ingredients into the wet mixture. Gently fold until just combined. Do not overmix.
8. Fill the donut pan about ¾ full in each cavity.
9. Bake for 7–9 minutes, until the donuts spring back when lightly pressed. Avoid overbaking.
10. Allow the donuts to cool in the pan for a few minutes, then transfer them to a wire rack.
11. Prepare the glaze by mixing the icing sugar with 2–3 tablespoons of lemon juice until smooth.
12. Decorate the donuts with the glaze and let them set.

Easy Spinach Banana Muffins 👇
Ingredients
Wet Ingredients:
• 100g fresh spinach
• Boiling water (for soaking)
• 2 ripe bananas
• 2 whole eggs
• 60g oil (¼ cup)
• 100g sugar (½ cup)
• 2 tsp vanilla extract
Dry Ingredients:
• 190g whole wheat pastry flour or all-purpose flour (1 ½ cups)
• ½ tsp salt
• 1 ½ tsp baking powder
• ½ tsp baking soda
• 1 cup chocolate chips + extra for topping
Instructions
1. Preheat the oven to 190°C (375°F) and line a muffin tin with liners.
2. Add the spinach to boiling water and let it soak for a few minutes. Then, remove the spinach and drain any excess water.
3. In a blender, combine the spinach, bananas, eggs, oil, sugar, and vanilla extract. Blend until smooth.
4. In a separate bowl, whisk together the flour, salt, baking powder, and baking soda.
5. Pour the blended mixture into the dry ingredients and mix until just combined.
6. Fold in the chocolate chips.
7. Divide the batter into muffin cups, filling them about ¾ full. Sprinkle extra chocolate chips on top.
8. Bake for 12-13 minutes or until a toothpick inserted in the center comes out clean.
9. Let the muffins cool before serving. Enjoy!
