Quick 2 weeks back home to work with the amazing teams at different hotels in preparation for CHOGM.
We focused on different dietary requirements and encouraged the importance and uniqueness of our traditional way of cooking. Food is delicious when cooked in open fire and it truly is a special thing to our people. I enjoyed my time with each of the teams.
Was also great to see and work with my brother Chef John. Malo lava uso.
Faafetai tele lava to the hard working team at Samoa Tourism Authority for organizing these trainings for our people. Thank you for having me.
We wish Samoa the very best for CHOGM.

Time with the team Le Lagoto Resort & Spa
We made vegan pies with palusami, coconut cream and local vege - DELICIOUS!
And our bakes of the day;
lemon papaya cake, koko samoa tart & coconut brownies.
Infusing as much local produce as we can into our food. We are so blessed it grows in abundance here in Samoa!

Chef met these lovely ladies picking clams and they were so kind to let him take some for lunch.
Such an awesome experience; listening to them share their knowledge about the different types of clams.
We are so blessed with all this natural goodness!
