Sitting in my feelings, I feel that the world needs to know how unbelievably amazing Chef John is. I don’t think I’ve ever worked with someone who so seamlessly “got it” and made my life better every day. He is brilliant, and talented, and dedicated, and creative, and hilarious. There is no one else who could have kept the steady drum beat of 904 H running and kept me sane for the past two years.
John and I connected from a job posting I made in a dumb restaurant industry group, and he managed to not judge me too harshly on my lack of hiring experience as I interviewed him while also working a full bar and asked him insane, disorganized questions. I’m so grateful he was able to see past my stress and chaos and took a chance on me and my cheese dream. He was not intimidated by the amount of work a small business with a tiny team would ask of him, and he never judged me for my disorder or perpetual lateness. He was always willing to indulge my schemes and harebrained ideas and my tornado of thoughts.
At 904 H and at Union Market, John did everything - he made most of the cheese slates served, he made a million cheese boards, and cut up countless quarter pounds of cheese, he taught classes, and ran private events and so much more. Many of my most proud cheese accomplishments were only possible because I had him as my partner.
The hardest part of saying goodbye to 904 H has been grappling with the fact that I don’t get to see John everyday. But our bond goes deeper than one physical space and now he’s permanently stuck with me texting him weird cheese ideas and pictures of my dog.
So everyone tell him how amazing he is and follow him where ever he goes because he whatever he does next, it’s going to be worth your time!

Hey cheese friends - it’s been two weeks since our last day of public facing action at 904 H, and I had to jump immediately into some family stuff, so I’ve been a little slow to post. (Also it feels bad to be on the internet right now.)
I’ve had a little bit time to reflect on our time at the bar, and especially of this past December. And while I am full of many different emotions, the most prevalent one is of gratitude.
Thank you thank you thank you to everyone who came out and supported us, all along, and especially in our final days as a bar. December was a record breaking month, with busier bar nights, frantic markets, an unreal amount cheeseboards, and still over 100 club memberships, even though we told everyone it was ending and we wouldn’t be mad if they canceled for the last month. It was a blur of cheese and tears and friends and supporters and SO.MUCH.WINE. Truly H Street, you folks came out and drank all of the wine. I placed what I thought was my “last wine order” three times so I wouldn’t run out too early.
All of this intensity and love tells me that we built something awesome, and gives me confidence that whatever comes next, I know I have people in my corner. So stay tuned! I’ve got a long winter’s nap coming up, and I don’t know exactly what’s after that, but I’ll keep this account filled with cheese and farm animals and updates when I have them.
