Monday night is Hawaiian night! Our regular menu is not available as all we do on Monday nights is Hawaiian food.

Doors open at 5:00 p.m. and we close at 8:00 p.m. Please be advised that certain items sell out faster than others. This week's menu is going to change up a little bit. Last week we added Poke bowls to the menu.
This week we are replacing the Poke bowls with Loco Moco!

Loco Moco is a staple dish in Hawaii. White rice with a hamburger patty smothered in gravy, and topped with a sunny side up egg!

I made two different gravies for this. One is a more traditional mushroom and onion gravy. The other is actually my Hawaiian curry. In my curry, there are some carrots and onions also.

Yes, there will be Pork Belly Char Siu again!!! That stuff sold out really fast last week!

Menu Items:
SPAM Musubi
Shoyu Chicken
Kalua Pork
Kalbi Beef
Pork Belly Char Siu
White Rice
Mac Salad
Daikon Kimchee
Seaweed Salad
Traditional Loco Moco
Curry Loco Moco

Dessert
I'm looking at making my Hawaiian Cinnamon Rolls. These are baked fresh and then I use my coconut glaze on it before topping it with toasted macadamia nuts.

I look forward to feeding you

It's not every day that I get to employ a Valedictorian! We are very proud of Bridget and she is a valuable asset around here. She is always so very eager to help and learn. I love her outlook on things. I employ many young people, and for a very good reason.

First of all, there's not a lot of jobs in our small town for young adults. Unfortunately, fast food jobs have been taken over by middle-aged adults. And, how can you blame them? Once the state of California decided that fast food workers should get a minimum of $20 an hour, it pushed many middle-aged adults to go and seek these jobs. This left high school students basically screwed. When I was growing up, fast food was a high school job and where you learned how to work. Not anymore.

Secondly, I think it is incredibly valuable to surround myself with staff members that have a completely different outlook than I do. They see things that I don't see. They have what I like to call "New Eyes". They are still trying to find their place in the world, and they have a completely different non-jaded view of life than I do. This is very valuable.

Just because they are young does not mean they are not able. Or willing.

Treat them as adults and give them the responsibilities that go with it. Don't accept excuses. Teach them, and more importantly, listen to them. If you do that, you will find that they can teach you also. Always remain a student.

So very proud of you Bridget!

Fried Chicken Night is moving to a new day.

For several weeks we have been doing our handcrafted fried chicken on Tuesdays starting at 5:00 p.m. We have been closed on Tuesdays for well over a decade as this is a day that we can do some deep cleaning and maintenance. With us doing fried chicken on Tuesdays, it has really put a damper on us getting done the maintenance that we need to do.

There will not be any fried chicken tonight. We are going back to being closed on Tuesday. Starting probably in one week, we will offer fried chicken on Wednesday nights along with our regular menu.

Please be aware that we will not be able to do Indian tacos or fry bread on Wednesday nights because we have to dedicate one of the fryers to just chicken.

I will post when we have a date that we are going to start this but it will be soon.

Monday Night is Hawaiian Night!!!!

Starting at 5:00 p.m. and going until we sell out (or 8:00 p.m. whichever comes first).

This night we are normally closed and we are doing something special. Our regular menu is NOT available. LET ME SAY THAT AGAIN. OUR REGULAR MENU IS NOT AVAILABLE.

This night lets me do something completely unavailable anywhere around. I get to offer you some handcrafted real Hawaiian food. There's little twists here and there though.

So Hawaiian Night has been very busy. And, we are actually going to expand the menu a bit tomorrow night. Please understand, I am hand making well over 90% of this entire menu. Things can go wrong and sometimes they do. The menu can change if I screw up.

We are introducing Pork Belly Char Siu to the menu. To be honest with you, I'm actually doing it a different way than I have in the past. This is a dish that I love, but I always thought that I could make it better if I cooked it in the smoker. So tomorrow, I'm going to run the risk and put it in the smoker and see how it goes.

Hawaiian Night Menu Items:
Kalua Pork
Shoyu Chicken
Pork Belly Char Siu
Kalbi Beef
Spam Musubi
Sweet Gochujang Chicken Wings
Macaroni Salad
White Rice
Seaweed Salad
Daikon Kimchee
Hawaiian Fried Rice
Crushed Cucumber Garlic Salad

We are also going to be offering Poke.
We will have fresh Ahi and Salmon. There will be various toppings and sauces so that you can design your own.

I'm going to try and knock out a dessert of Butter Mochi with a toasted Macadamia Nut and Coconut topping.

We have been getting a bunch of Islanders from the AV and Bakersfield messaging me and coming up. Hopefully soon we will add Loco Moco and maybe some Lau Lau or Manapua.

And yes, tomorrow I will be offering our fresh brewed Hawaiian Iced Tea!

Fried Chicken Cobb Salad!!!!

This is enough for two people!

Our BBQ Cobb Salad has been very popular for well over a decade and now we are testing the waters by serving some of our handcrafted fried chicken on top of it. This is cold fried chicken and it makes a very refreshing salad.
We hand wash and cut all of our vegetables right here and we even make all of our own salad dressings.

A full order is $17 and a half order is $12

What a strange night.

So that everyone is very clear on this, don't come into my place and mistreat my staff. I won't ignore it. I won't go with the motto of "the customer is always right". I won't call the police. I will definitely handle it myself. I don't care who you think you are. You walked into my dream, not me into your fantasy. There is a dictatorship here, and I'm the head dick.

That being said, if you disrespect my staff; you will absolutely deal with me personally.

There are very few jobs in our small town for young adults. I tell my staff all the time, "If you are old enough to get up and get your butt to work on time and make a paycheck, then you are an adult".

Over the years, so many parents have brought me their teen sons and daughters and asked me to employ them. They know that I will not accept excuses and I will make them work for every penny that they earn. I look at my staff much as I do my own children. I make myself incredibly accessible to them, even if it's 2:00 a.m. on a Tuesday night. My entire staff is the only reason why I am successful.

Tonight, I had a group of construction workers come in and one of my younger workers came back into the kitchen crying. I went out to confront them and resolved it. It was a misunderstanding. It was resolved, but not without a little tension. Once I explained the situation to him, he agreed there was a misunderstanding and apologized. I apologized too.

Not even an hour later, one of my newest female team members told me that she was not comfortable going to a table outside anymore because the guys were asking her a bunch of questions that had nothing to do with the food. They were asking her how old she was. So I walked out to the group and explained to them that if you have to ask a young lady how old she is, she is probably too young for you to be asking that. One of them thought it was funny and was smiling and I asked him if he thought I was serious or not? Don't smile at me and think I'm going to be all happy about it. He apologized and said he only smiles when he's nervous. I said, all of these workers are literally like my adopted children. Disrespect them or you make them feel uncomfortable, and you're going to have to deal with me. I'm a mirror. You give me attitude and I will get it right back. You disrespect my staff and you're going to deal with a very pi**ed off me. That group apologized and then promptly left. Probably a good thing.

I swear I hate being like this. The entire staff was saying that my wife was in the restaurant very stressed out when I went outside. My wife remembers me surrounded by Long Beach Police department in the middle of the street well over 20 years ago when we first got married. Yeah, that's a whole other story.

Let's just keep it simple. When you go out in public to establishments, treat people with respect. They are just trying to do their job and help you. Things go wrong all the time. They are still just trying to help you. Be a good person and good things will happen. Be an as***le, and you have to deal with dicks like me.

My staff makes me much better than I ever am.

Remember, every day is a good day for race. The human race.

CONTEST is OVER

We haven't had a contest in a very long time!

The winner will receive a $50 Red House Gift Certificate!

This one is not going to be easy. What the hell?! Let's make it a $75 Gift Certificate!!!

Tonight, I painted some of our interior walls. As many of you know, people write on the walls here at Red House. Everything from simple signatures to elaborate messages and even drawings. Every couple of years, I paint over them and we start all over. Tonight was the night!

I have been doing this since we opened approaching on two decades. I usually do this alone like tonight, but staff members have helped me in the past a few times.
Every time I paint, I ALWAYS listen to the same album. When I lived in my boat, I painted the whole thing listening to this album. The same goes for my first apartment, home, and this restaurant. In fact, anytime I paint anything, I always put this album on.

This contest is open to the very few employees that have painted with me.

So......... what is the album that I always pair too? This should be fun.

The winner gets a $100 Gift Certificate! Oh wait, I said $75. What the hell? Make it $100!!!!

A quick reminder to everyone that Red House BBQ, Red House BBQ Satellite Station 1, and Island Grindz will all be closed tomorrow for Memorial Day.

Memorial Day is a very important holiday. I have never had one of my businesses open on this day, and I will never have anybody work for me on this day.

Coming from a very long military family, It would be an insult to the memory of all of those who gave their life for us.

Freedom isn't free.
