Our Story
I fell in love with the cuisine and culture of Peru after hiking the Inca Trails to Machu Picchu and travelling the coast and country side with my best friend, Rodrigo, from Lima. We found ourselves sitting in a small cafe in Cusco, when Rodrigo asked me, "What do you think you will do 10 years from now?" As I was indulging on my "comida," I quickly responded, "I am going to open a restaurant and call it Cafe Cusco!" The thought never left my mind and as the years went by I finally decided to make the dream a reality and open Cafe Cusco on C-Street with my mother, Claire. Our beautiful building was built in 1883 by two brothers under the name Bartlet & Bartlet. One brother held a doctor's office on the second floor where our lounge is not located. The main floor was a pharmacy drug store. during the period C-Street was the headquarters for the Frisco Railroad. Many people would have come through our doors since then. However, by the turn of the century the building was abandoned and in much disarray. By 2010, artist Erik Kinkade oversaw the historical restoration of 234 East Commercial Street. Cafe Cusco opened its doors in July of 2013 and has become a proud member of the Historic C-Street Community and the North side of Greater Springfield. We strive to provide exciting healthy dining options with a Peruvian and Latin inspired flair. We especially take pride in accommodating food allergies and healthy diets such as Vegan, Vegetarian and Gluten-free

Tuesday started Hispanic Heritage Month. We have been very proud to have organizations in our community like Groupo LatinoAmericano. Please follow them and show your support weather by financially supporting a gala, cheering on their performance at Culturfest or many other places. They’ve brighten Springfield for many years keeping the music and dance of Latin culture in our community alive and vibrant!

We want to take a second to share a really special and personal story about Cafe Cusco. You may have admired the decor at Cusco, but you likely don't know the history behind some of it! We asked Joe a couple questions about the decor at Cusco, and the connection it has to his beloved late Dad 🧡
Q: Can you tell us about your Dad's role in Cusco?
Joe: My dad was our general build it and fix it man. He had retired right before we opened the restaurant and refused to be on the payroll so he could always say he was “retired” and doing what he wanted to do.
Q: Do you have a fav memory of him, related to Cusco?
Joe: Favorite memory at Cusco was when I told him we needed a giant blue door for the dining room wall to be reminiscent of the giant blue doors in Cusco. He didn’t say a word but just disappeared. He arrived hours later saying he found the largest door he could find in Springfield at the ReStore. It came from an old church. So we immediately painted it and bolted it to the wall with 8 bolts. We sunk the bolts in and covered them with wood putty and paint. But to this day I tell people it’s simply hanging on a small nail 😂
Q: Anything you think he'd like to tell us?
Joe: He would encourage others not to stress on the negative things and trust God for the bigger plan in their lives.
