POV: Day 2 of a luxury yacht charter in the Bahamas.

Tonight’s menu:

🧀 Triple cream brie en croûte

🐟 Tuna Napoleon with marinated cucumbers, avocado, and sushi grade tuna

🐑 Rack of lamb with cognac demi glace, roasted garlic, butter kissed carrots, and garlic potatoes

🔥 Beach bonfire at Highbourne Cay

🍪 And because graham crackers are overrated… I built a bougie s’mores bar with Tate’s cookies, Stroopwafels, gourmet chocolates, and all the extras.

No Hershey bars in sight.

Just another day as a yacht chef in paradise.

POV: Day In The Life Of A Yacht Chef | Day 1 On Charter 🛥️🔥

The provisions are loaded.

The galley is stocked.

The guests are about to step on board.

This is Day 1 of charter and the excitement is real.

Tonight I am serving a three course dinner starting with my modern wedge salad. Crisp lettuce, beef bacon, feta & parmesan dressing, marinated tomatoes, crispy onions, balsamic reduction, and micro sprouts.

For the main course, fresh wahoo with a sun dried tomato pesto and high heat roasted cauliflower finished with lemon. (Thank you Patricia for the inspo)

Then we close out the evening with a Lavender London Fog Crème Brûlée.

This is the part people do not see. The preparation. The anticipation. The pressure. The passion.

Currently in Nassau, Bahamas provisioning for charter and I stumbled across something that seriously surprised me...

“Back To Nature” Double Classic Cream Sandwich Cookies.

WOW.

As someone who spends his life around food, I’m usually pretty skeptical of “better for you” versions of classic snacks. But these absolutely delivered.

They have that rich chocolate cookie crunch, a generous layer of creamy filling, and honestly taste remarkably close to Double Stuf Oreos. The difference? They don’t leave you feeling like you just demolished a chemistry experiment.

Perfect with a cup of coffee, perfect as a late night yacht snack, and dangerous because it’s hard to stop at just one.

Chef Rating: ⭐⭐⭐⭐⭐

Would I buy them again? Absolutely.

The Bahamas just got a little sweeter.

Another charter begins.

The early morning walk to provision is always the same, but every trip is completely different. New guests, new personalities, new preferences, and a new adventure waiting to unfold.

One thing that never changes in the Bahamas is the pace of life. A little slower, a little calmer, and a reminder to enjoy the journey.

Guess what my favorite meal is as a chef????? The one I don’t have to cook 😂

Update today from the Bahamas. I hope everybody is doing well. I have an eight day charter starting in a couple of days. We gotta go and spend a lot of money on provisions. The freezers are stocked with the finest proteins that this world can offer. I miss all my shifts for your family and I miss my children and my wife and my dog and my cat. Big kisses to everybody. And you know I’m typically long hair don’t care but I had to get a haircut for this one baby.

Some people give gifts.
Some people give memories.
And some people take your whole life story, your family, your struggles, your travels, your purpose, and turn it into a song.

My buddy Harry J Lee did exactly that for me.

Hearing my life through someone else’s eyes was humbling in a way I can’t fully explain. The late nights. The miles traveled. The kitchens. The chaos. The family moments that matter more than any paycheck. The failures. The wins. The mission to lift people up whenever I can.

This life has taken me around the world, but at the end of the day, it’s never really been about chasing things. It’s been about chasing experiences, building memories, feeding people, loving hard, and trying to leave every room a little better than I found it.

To have someone notice that enough to write a song about it honestly means more than they probably know.

Life is short.
Take the trip.
Call your family.
Cook the meal.
Start the business.
Encourage people.
Laugh loudly.
See the world.
Help others rise with you.
