Pork is indeed on this fork 🍴

This past week’s special was Pork Porcetta (rolled with prosciutto, smoked apples, onions, turnips, garlic cloves, thyme, honey, soy, salt, pepper and Dijon mustard). Its garnished with roasted mini Gara apples, filled with a apple and fig ragu, and finished with a Dijon rosemary fig sauce.

Back like I never left 😉

Shaved Prosciutto with toasted marcona almonds, pickle shallots, machengo cheese, and crisp blackberry mojito gastrique.
