Classic Minestrone

Ingredients
2 tbsp olive oil
1 medium onion, diced
2 carrots, diced
2 celery stalks, diced
2 cloves garlic, minced
1 zucchini, diced
1 cup green beans, chopped
1 can (14 oz / 400 g) diced tomatoes
4 cups (1 L) vegetable broth
1 can (15 oz / 425 g) kidney beans, drained and rinsed
1 can (15 oz / 425 g) cannellini beans, drained and rinsed
1 cup (100 g) ditalini or small pasta
1 tsp dried oregano
1 tsp dried basil
1 bay leaf
Salt and black pepper, to taste
¼ cup grated Parmesan cheese (optional)
2 tbsp chopped fresh parsley

Method
Heat the olive oil in a large pot over medium heat. Sauté the onion, carrots, celery, and garlic for 5–6 minutes until softened.
Stir in the zucchini and green beans, then cook for 3 minutes.
Add the diced tomatoes, vegetable broth, oregano, basil, and bay leaf. Bring to a boil.
Reduce to a simmer for 15 minutes.
Stir in the kidney beans, cannellini beans, and pasta. Cook for 8–10 minutes, or until the pasta is tender.
Season with salt and black pepper. Remove the bay leaf.
Serve hot, topped with Parmesan cheese and fresh parsley.

Ingredients

1 lb (450 g) cooked gyro meat (lamb & beef or chicken), sliced
2 cups cooked rice or seasoned yellow rice
2 cups chopped romaine lettuce
1 cup cucumber, sliced
1 cup tomatoes, diced
½ red onion, thinly sliced
½ cup crumbled feta cheese
1 cup tzatziki sauce
1 tbsp chopped fresh parsley
Lemon wedges, for serving

Method
Prepare the rice according to package directions.
Heat the gyro meat until hot and lightly browned.
Fill a serving bowl with rice and lettuce.
Arrange the gyro meat, cucumber, tomatoes, and onions on top.
Sprinkle with feta cheese and parsley.
Drizzle generously with tzatziki and serve with lemon wedges.

Gyro Fries

Ingredients
1 lb (450 g) frozen or homemade French fries
12 oz (340 g) cooked gyro meat, sliced
1 cup tzatziki sauce
½ cup diced tomatoes
¼ cup sliced red onion
½ cup crumbled feta cheese
1 tbsp chopped parsley

Method
Bake or fry the French fries until crispy.
Heat the gyro meat in a skillet.
Place the fries on a serving platter.
Top with the hot gyro meat.

Pork Gyro

Ingredients

Method

Vegetarian Gyro

Ingredients

For the Falafel:

1½ cups (250 g) cooked chickpeas, drained
¼ cup fresh parsley, chopped
¼ cup fresh cilantro, chopped
2 cloves garlic
½ small onion, chopped
1 tsp ground cumin
1 tsp ground coriander
½ tsp paprika
½ tsp salt
¼ tsp black pepper
1 tbsp all-purpose flour (or chickpea flour)
1 tsp baking powder
Oil for frying

For the Gyro:

4 pita breads
1 cup tzatziki sauce
1 cup grilled zucchini, sliced
1 cup grilled eggplant, sliced
1 cup grilled bell peppers, sliced
1 cup shredded lettuce
1 tomato, sliced
½ red onion, thinly sliced
½ cup crumbled feta cheese (optional)

Method
Pulse the chickpeas, herbs, onion, garlic, spices, flour, and baking powder in a food processor until coarse.
Shape into small balls or patties and chill for 20–30 minutes.
Fry at 350°F (175°C) for 3–4 minutes per side until golden brown.
Warm the pita breads.
Spread tzatziki on each pita.

Ingredients
1 lb (450 g) ground lamb
1 lb (450 g) ground beef
1 small onion, grated
4 cloves garlic, minced
2 tsp dried oregano
2 tsp ground cumin
1 tsp paprika
1 tsp dried thyme
1 tsp salt
½ tsp black pepper
6 pita breads
1 cup tzatziki sauce
2 tomatoes, sliced
1 red onion, thinly sliced
2 cups shredded lettuce

Method

Mix the lamb, beef, onion, garlic, oregano, cumin, paprika, thyme, salt, and pepper until well combined.
Shape into a loaf or patties and bake at 375°F (190°C) for 45–55 minutes, or grill until cooked through.
Let the meat rest for 10 minutes, then slice thinly.

Salt and black pepper
2 tbsp olive oil
8 oz (225 g) mushrooms, finely chopped
2 tbsp butter
2 cloves garlic, minced
6 slices prosciutto
1 sheet puff pastry, thawed
1 egg, beaten (egg wash)
1 tsp Dijon mustard

Method
Season the beef with salt and pepper, then sear in hot oil for 2–3 minutes per side. Brush with Dijon mustard and cool.
Cook mushrooms with butter and garlic until all moisture evaporates. Cool completely.
Lay out prosciutto, spread the mushroom mixture over it, then wrap around the beef.
Wrap tightly in puff pastry and brush with egg wash.
Bake at 400°F (200°C) for 35–45 minutes, or until desired doneness.

Salt, for pasta water

Method
Cook the spaghetti in well-salted boiling water until al dente.
Cook the guanciale in a skillet over medium heat until crispy. Remove from heat.
Whisk together the eggs, egg yolks, Pecorino Romano, and black pepper.
Toss the hot pasta with the guanciale and its rendered fat.
Remove from heat and quickly stir in the egg mixture, adding a little reserved pasta water until creamy.

Method
