Traditional desserts from the Beira-Baixa in Portugal were originally home-made using very healthy ingredients like eggs and milk that were produced locally. In those old times, there was no baking paper, and our grandmothers used to put hot ashes on the lid of the cooking pan (which was mostly made of iron) to prevent drops of condensation from forming that could cause lumps in the pudding when cooking.

In Portugal, rissoles are known as rissóis (singular "rissol") and are a very popular snack that can be found in many cafes, barbecues and house parties. Rissóis are a breaded pastry shaped as half-moon, usually filled with fish or shrimp in Béchamel sauce and then deep fried. Minced meat is often used too. Other usual fills include shrimp and cod.
