CHOPPED EGG SALAD

You already know by now I love quick, easy, and high protein meals.
.
I also feel egg salad gets a bad rap, but its actually one of my favorite things when done right.
.
This is a super simple recipe thats low carb, packed with a ton of protein, and it’ll keep you full. Dont like lettuce as the base? Use bell peppers, or your favorite bread - sourdough would be amazing here.

Here is how to make it:
.
1.Of course this would be cleaner in a bowl, but lets get messy and chop everything up on a cutting board. We’ll start with 1 medium avocado. Cut in half, scoop out the middle, and toss the seed away.
.
2.I medium-boiled 4 eggs for about 9 mins. I just remove them from the fridge, toss in boiling water for 9 mins and 20 seconds. When time is up, just rinse under cold water, and peel them. They should peel super easily. Cut in half, then add to the board with the avocado.

3.Toss in 1 dill pickle, sliced (about 1/4 cup), 1 small shallot, 1 to 2 tbsp German or brown mustard, 1 to 2 heaping tablespoon cottage cheese, a small handful of fresh dill, a small handful of cilantro, 1 tablespoon mayo, a pinch of salt, pepper.

4.Chop everything with a knife. If you like it on the chunkier side, chop less. If you like it on the creamier side of things, keep chopping. Then just give it a taste and adjust as you wish.

5.Pop these onto romaine lettuce leaves, then top with everything bagel and Chile lime seasoning.

Please respect new drivers and driver education vehicle's.

There was a point in time. You were learning how to drive.

When you see a student driver vehicle or that new driver sticker. Please don't tailgate. Do not honk. Be patient.

Why? An inconsiderate driver can scare a new driver or a student driver. Being inconsiderate can or may cause an accident. That could have been prevented.

Always think first, before you respond to a new driver or someone who is learning how to drive. You've been in their position.

We all had to learn how to drive, at some point in our life. Please be patient with student drivers.

Yesterday a lady was honking her horn repeatedly at us. Flipped us off and was making hand gestures. Why? My student was waiting behind the cross walk to turn left. Not sure why she wanted my student to turn. There was opposing traffic. It wasn't safe to turn.

I wish I had got her license plate and the make an model of the green car. She was driving in. Her behavior was unacceptable. She really should have be ashame of herself.

Driving takes time and to become a safe driver. Practicing safe driving habits can save your life and the life of other's. Making poor driving decisions could lead to traffic tickets. Being rude and inconsiderate can lead to road rage. Not paying attention can cause fatal accidents.

Please be a responsible driver. Pleae be a courteous driver. Please follow the rules of the road. Please practice safe driving habits.

The average driver. Never looks at the big picture.

A good driver is always aware of what is in front of their vehicle, behind their vehicle and on the sides of their vehicle.

Tips:

1. Keep 4 seconds of following distance at all times on city streets. Add 2 more seconds of following distance in bad weather.

2. Scan ahead for potential problems and changes while your driving.

3. When ever you break or slow down, check your rearview mirror.

4. DO NOT drive distracted.

5. Keep your emotional under control.
