PROTEIN PACKED EGG BITES!
Ingredients:
4 slices of deli ham
2 eggs
2 tbsp cottage cheese
Diced red bell pepper
Cilantro
1 strip of bacon, cooked
Crumbled feta
Salt and pepper
Directions:
Whisk the egg and cottage cheese with salt and pepper.
Place a slice of ham in the bottom of each muffin cup. Fill 2 thirds of the way with egg mixture. Top with the remaining ingredients.
Bake for 15-18 minutes

Gluten-Free, Sugar-Free Poppy Seed Muffins!
Ingredients:
2 cups almond flour
3/4 cup monk fruit sweetener
1 tablespoon baking powder
1/4 teaspoon xanthan gum
1/4 teaspoon salt
1/3 cup butter, melted
1/2 cup almond milk
3 large eggs
1/2 teaspoon almond extract
1 tablespoon lemon zest
2 tablespoons lemon juice
3 tablespoons poppy seeds
1/4 cup white chocolate chips
Instructions:
Preheat the oven to 350°F.
Line a muffin pan with muffin liners.
In a bowl, mix together all of the dry ingredients: almond flour, monk fruit sweetener, baking powder, xanthan gum, and salt. Combine well.
Add the melted butter and almond milk. Mix until combined.
Add the eggs, almond extract, lemon zest, lemon juice, white chocolate chips and poppy seeds. Mix until well combined.
Spoon the dough into the muffin cups and bake for 20-25 minutes at 350°F.
