Ask an old Cajun where crawfish came from and you may get an answer that starts in Canada. 🦞

The story goes like this. When the Acadians were driven out of Nova Scotia in the 1750s, the lobsters of those cold northern waters loved them so much that they decided to follow. The journey south was long and hard. Mile after mile, the lobsters grew thinner and smaller, and by the time they finally reached the bayous of Louisiana they had shrunk to the size of a finger.

They stayed anyway. The tale says they looked at the little houses the Acadians were building and copied them, which is why crawfish still raise small mud chimneys along the ditches and the water's edge. Look for them after a good rain and you will see whole neighborhoods of them. 🌾

It is folklore, of course, and nobody tells it as science. But it says something true about south Louisiana, where exile turned into home and a humble mudbug became the center of the table. Today the state raises the great majority of the crawfish eaten in America. 🔥 Who first told you a story like this one at a crawfish boil?
