Rankin’ milks... 🐄🥥

I was gonna make a post on the abuses of the coconut industry today, but in doing my research, I ran across an article ranking plant and dairy milks from worst to best based on how cruelty-free they are. I thought I’d share my thoughts on that instead, because it touches on the coconut cruelty as well.

It’s a pretty good list, with cow milks coming in last, but I've gotta disagree with their other choices a bit, particularly where they placed cashew and soy milk.

Cashew milk is a big one, so it should absolutely move lower on the list, below almond milk to spot 10. Most people are unaware that cashew harvesting is absolutely devastating for the men, women, and children (sometimes entire families) who are forced into slave labor conditions. Raw cashews contain caustic acids that burn and disfigure the workers' hands, and many of them are literally locked inside...

Rice Cake Topping

Over in my FB group, Positive Swaps, last week, I asked for some ideas for yummy toppings for these Quinoa & Red Rice Cakes.

I decided to make some chocolate hummus to try as a topping and it was delicious! If you'd like the recipe, stay tuned I'll be sharing it in a summit I'll be participating in for Valentine's Day weekend. It's all about self-care and self-love. ❤️

We need to move past the idea that plant-based eating is just a "lifestyle choice." This isn't just about environmentalism anymore...

A brand new UK national security assessment warned that global biodiversity loss and ecosystem collapse are no longer just environmental concerns, they are direct threats to food security, economic stability, and global safety. The report states that every major ecosystem on Earth is degrading, and some could begin collapsing 🔜 as early as 2030 ◀️

These collapses would permanently damage the systems that produce food, regulate weather, and supply clean water; triggering higher food prices, shortages, conflict, migration, and increased disease risk worldwide.

The report is blunt about food systems being at the center of this crisis. Large-scale food production is identified as the single BIGGEST driver of biodiversity loss, and current global diets require more land, water, fertilizer, and imported inputs than ecosystems can sustain.

When ecosystems fail, food production drops, countries compete for remaining resources, and nations that rely heavily on imports, like the UK, become especially vulnerable to rising prices and disrupted supply chains.

From a food security perspective, this makes plant-based diets a practical realistic response, not some "lifestyle trend." Producing food directly for people, like beans, lentils, whole grains, vegetables, and fruits, requires far fewer resources than feeding crops to animals first. (We currently slaughter apx 92,000,000,000 land animals a year to feed a human population of just 8.1 billion)

In a world facing ecological limits, plant-based food systems can feed more people using less land and water, while reducing pressure on forests, freshwater systems, and soils that are already desperately nearing collapse.

The report’s conclusion is clear, protecting ecosystems and changing how we produce food is cheaper, faster, and more reliable than trying to fix the damage after collapse occurs.

​The world is stressful enough without a diet that adds inflammation, fatigue, and brain fog to the mix. The Standard American Diet is a sinking ship. You can stay on board, or you can step onto the "life raft" of plant-based eating, and remove a massive source of physical stress from your body.

You deserve to feel your best and have the energy to enjoy your life, no matter what the headlines say. 💚

Our yummy holiday meal 🎄 Yesterday we made an oat and lentil loaf, a tofu and potato quiche, macaroni salad, and these delicious sweet potatoes. If you have a Sprouts Market in your area, you’ve got to try Melissa’s Murasaki sweet potatoes. They’re purple on the outside, cream colored on the inside. Sooo good!! 😋 We also had some cacao and carob banana nice cream ...with some store bought waffles. 😉😇 What was your most plant-positive dish yesterday? 💚

A watermelon and a daikon radish had a baby…
and that baby grew up fabulous! 😍 Meet the watermelon radish.

Last week I mentioned the new Public Market in Redding and how we grabbed those tiny eggplants and a watermelon radish.

Have you ever seen one before? On the outside they look rather drab. Kind of a pale whitish-greenish color. But once you cut into it… cue the angels singing! ✨️💖 Bright neon pink and green and totally gorgeous.

They’re crunchy and I think they’re very mild tasting. Some people describe them as peppery, but the few times I’ve had them I’ve never experienced that typical radish bite. 🤔

You can use them to:
• add thin slices to salads or Buddha bowls
• top an Asian-style noodle dish
• top tacos
• layer in sandwiches
• pickle them
Get creative!
