Are you tired of of turkey yet? Here some ideas for what to do with your leftovers to mix it up a bit!

Turkey and Dumplings (making this for dinner)
Turkey Pot Pie
Turkey Soup (with noodles or rice or potatoes)
Shepards Pie
Turkey Salad (This is what I made today)

My turkey salad has chopped up turkey, diced celery, diced onions, sliced almonds, dried cranberries, pistachios, pecans, salt and pepper to taste and mayonnaise. There’s a million ways to make chicken/turkey salad. You could use fresh grapes or raisins, you could switch out any of the nuts or try cashews.

Alternate ideas: chopped turkey, mashed avocado, mayo and/or sour cream, diced tomatoes, diced onions, chopped cilantro, a couple spoons of salsa, diced celery, diced almonds or any other nut you like and salt and pepper to taste. Spice it up a bit and add some diced jalapeño.

Serve the turkey salad on leftover rolls, Hawaiian rolls, tortillas, wraps, sliced bread etc or serve on a bed of lettuce or arugula.

Possibilities are endless.
