Louisiana Fried Catfish was founded by Rev. Louis “Jack” Carroll in 1980. So now you have it.
The Highland Hills location became legendary as the spot for the best fried catfish in Dallas. Jack’s daughter Armentha “Peaches” Carroll was handed the business in 1981 at an early age, straight out of high school.
