Chochu Local pork belly is smoked for hours over mesquite, then brought to a crisp before serving.

Tatiyas /ta•tē•dzas/ or titiyas 😉

Joy’s coconut milk flatbread

Y is pronounced “dz” in CHamoru
Chamorro language was largely influenced by Spanish colonization since the 1500s.
“Tortillas” is likely the origin of this traditional food (primarily made of corn/maiz/elotes, which was widely found in the islands, and sometimes flour) - but with a Chamorro spin, we call it TATIYAS. And with our islands’ local ingredients, we use coconut milk in our flour version. 🥥

I make my flour titiyas with coconut milk. It’s delicious on its own, or topped with chicken or shrimp kelaguen. 😋
