A micro bakery featuring old world techniques, a stone hearth, and naturally leavened bread. It takes an astonishing 36 hours to make one loaf of Noble Bread.

Noble Bread is a small scale bakery featuring old world techniques, a stone hearth, and naturally leavened bread. Our bread is created using only organic, GMO free flour, water, sea salt, and natural levain. Utilizing a mixture of heirloom wheat and ancient grains makes the bread far more complex and biologically active than just plain white bread. Our starter is a culture of wild yeasts used to slowly levain bread.

PUMPERNICKEL 🀎 bold, a little sweet, and built for serious sandwiches.

Try it stacked with pastrami, swiss, and grainy mustard, or toasted with smoked salmon, cream cheese, and pickled onions. Around here we also love cubing it up, tossing it with olive oil, garlic, and herbs, and baking it into the most flavorful homemade croutons your salad has ever seen.
