Seared Sweet Potato Gnocchi with Cauliflower, Truffle, Pecans & Parmigiano Reggiano ☀️🍝

Ingredients: for 2
1 package of Tuscana pasta Sweet potato gnocchi, cauliflower florets (small head) , 2 garlic cloves, olive oil, butter, 1/2 cup of chopped pecans, tablespoon of truffle oil, salt, pepper (to taste), grated Parmigiano Reggiano

Instructions:

1. Sear cauliflower in olive oil until golden; set aside.
2. Boil gnocchi for 3 min and then In same pan, cook gnocchi in olive oil + butter until crispy.
3. Add garlic, cook 1 min.
4. Toss cauliflower back in with pecans.
5. Finish with truffle oil and Parmigiano Reggiano.
