A silly goose is “almost” on the loose!
Last weekend we celebrated as she and prepare to become parents. What a joy to shower her with love and gather together with the people who make up her tribe. You are all such incredibly special💖

Easy and healthy homemade avocado cilantro lime salad dressing. Can be made vegan with silky tofu instead of Greek yogurt (may need more spices)

In a blender or food processor, mixed together :
1 ripe avocado
1/4-1/2 cup Greek yogurt
1 teaspoon of minced or fresh garlic
1/4 cup, chopped cilantro
1 lime squeezed
2 tablespoons extra-virgin olive oil
2 tablespoons of honey or maple syrup for vegan
2 tablespoons of water to adjust thickness
Salt pepper to taste

Store in refrigerator in a glass jar for up to 1 week.

Enjoy on salad, chicken strips, tofu, steak, or with chips. So delish!

Sometimes all it takes for me, is the word pizza, and I am on board. Presenting this easy cabbage pizza recipe.

Start by washing a medium head of cabbage and slice into 6 even slices just under 1” thick.

Depending how soft you want your cabbage, lightly coat both sides with a little bit of olive oil, and bake for about 10 minutes at 350 degrees F.

Or you can skip that step and coat the top only with olive oil, your fave Italian seasonings, garlic and Parmesan cheese and bake for 35 minutes at 350.

I tried the first method because I was worried the cabbage wouldn’t get soft enough. Next time I will try the second step.

From here the creativity is all up to you. I used chops meat sticks on a few, and did my favorite mixture of pineapple, onion, and veggies on some of the others. Or just plain cheese.

Don’t forget to add some oregano or Italian seasoning and/or basil if you wish.

Then finish baking for another 10 to 20 minutes according to your preference.

Honestly, I didn’t even miss the pizza dough.

That’s saying a lot for me!
