Credit where credit’s due.

What makes a great pint? It starts long before it reaches the bar - and we’re taking our cues from one of Ireland’s greatest pubs, The Gravediggers in Glasnevin.

As Jack explains, a perfect pint of plain comes down to how the b**r is stored, the freshness of the keg, the gas mix, clean lines, and, of course, the pour itself. But one thing matters more than you might think - the glass.

A few years back, the legendary Ciaran Kavanagh showed us his double-wash system. Guinness glasses are washed separately, first with chemicals, then again without, before being left to air dry. No cloths, no recontamination, no residue.

Then it’s over to the bartender. We pour two pints from every line each day and constantly spot-check the quality.

Because these days, everyone’s a Guinness reviewer - and you all deserve the best. No cutting corners, no “it’ll do” - we’re striving for greatness, every single time.

Cleanliness is next to godliness. When it comes to Guinness, we’ve talked you through our controversial three-part pour, our divisive Split the G Wall of Fame, and what defines the perfect Schtick.

Next, we’re talking glassware. Like everything we do, we’ve researched the perfect pint to the nth degree. And we’ve heard all the theories. “It’s all about the ambience of the place… the time of day… what you’ve just eaten… the length of the lines from keg to tap… how the kegs are stored…” And so on.

But there’s something else - the glass. Specifically, how it’s washed and dried.

Our diligent system follows a precise sequence - washing glasses with and without detergent, using both hot and cold water, and an air-drying and rotation system.

Confused? Jack’ll be talking you through the whole process in an upcoming video. And hopefully, this one won’t cause any arguments.

Although, given our track record, we wouldn’t bet on it….

For The Gilded Lady, we’re bringing a little bit of Japan to Water Street - via San Diego.

Inspired by Kaitlyn’s monthly trips to Mitsuwa Japanese marketplace with her mom, this wh***ey sour takes its cues from Japanese kissaten and Royal Milk Tea, layering buttered biscuit-infused Teeling Single Grain Irish Wh***ey with clotted cream Shortcross Poitín, sweet tea syrup, ube, lemon, egg white and Lady Grey.

The ube gives it a super vivid color, while the tea, cream and biscuit bring cozy, nostalgic notes that are perfect for Fall - right down to the little Walker’s biscuit served on the side.

If you like milk tea, you’ll love this drink.

We’ve got three new seasonal cocktails live in The Parlor, here until Jingle Jangle takes over the whole building in just a few weeks.

Tomato, Tomato brings together Grey Goose, Acid Spirits Celery and Horseradish, tomato water, melon and Bloody Mary foam, while Money in the Banana Stand combines Ron Zacapa 23, Myers’s Jamaican Dark Rum, Banana Amaro, Yellow Chartreuse, butter bread cream and egg.

And then there’s our ever-changing frozen cocktail, with a new one landing each week.

Stop in Tuesday - Saturday, 5pm - 1am, or Sunday, 4pm - midnight, and catch them while you can.

Halloween might be just one day, but at The Dead Rabbit New York and Austin, Samhain spans four whole weeks.

From October 5th ‘til November 1st, things get a little eerie on both sides of the country as we look back to the ancient Irish festival that gave rise to many spooky-season traditions we know today.

Corn stalks, corn dolls and carved turnips will take over the bars, while Púca, Stingy Jack and the Cailleach emerge from Irish folklore as the barrier between the physical and spirit worlds grows thin.

We’ll have a costume party at both bars on October 31st, and everyone’s invited - the stranger the outfit, the better.

Come over to the dark side.

Yesterday, Seac Mac Fhearraigh shared his memories of growing up in Belfast during the darkest days of the Drumcree dispute, and why the decision to allow an Orange Order march down Garvaghy Road troubled him so deeply.

Today, thousands of people have gathered on that same road. The residents who live there have made their feelings abundantly clear, and, at the time of writing, the march has not proceeded.

Whatever happens next, we hope above all else that calm prevails.

The North of Ireland has come too far, and too many people worked too hard for peace, for any community to be dragged back towards the fear, anger and division that defined those years.

The people of Garvaghy Road deserve to feel safe in their own homes, and everyone involved has a responsibility to ensure that today ends without violence.

There is nothing to be gained from reopening old wounds - instead, may we listen to the people who still carry them.

It’s always a pleasure being back home in Ireland, and this week was no exception.

We spent three days at Dublin’s Mark Moriarty Studio, serving up Glendalough drinks alongside dishes from one of Ireland’s most exciting contemporary culinary talents - who also happens to be our Chef Partner.

Huge thanks to everyone who stopped in to see us. And if you haven’t visited the Studio yet, we’d very much recommend booking yourself in.

For now, we’re off for a few pints in London before heading back to NYC. Sure, we’ve earned it.

And Belfast - we’ll see you in a few weeks.

Cúpla Pints is back after a summer break, and this time we’re handing the taps back to Paddy McDonnell for Episode Thirteen - and learning more than we wanted to about his intimate tattoo…

Paddy scored 8/10 on his first try, but a lot’s happened since then. He’s spent the summer gigging across Ireland, survived a Bristol show where just eight people turned up, and is now Stateside before heading home for a 47-date tour of his brand-new show, Paddy Powerful.
But has all that time on the road improved his pint-pouring skills?

Apparently so. Paddy pulls off a very impressive 9.5/10 on attempt number two, jumping 1.5 points up the leaderboard and coming dangerously close to perfection.

That tattoo, though? Some things are best left unsaid…

We never miss an opportunity to celebrate Guinness.

And today, September 24th, marks Arthur’s Day - live now at all of our venues. Here on Water Street, that means $8 pints of Guinness from open ‘til close, plus $2 oysters ‘til 10pm.

Why? Because 267 years ago, Arthur Guinness signed his famous 9,000-year lease at St. James’s Gate.

Born in County Kildare, Arthur was just 34 when he took over the then-disused Dublin brewery in 1759, paying an annual rent of £45. He started out brewing ale before turning his attention to porter, eventually laying the foundations for the stout now poured in pubs around the world.

Any excuse for a party - but this one’s particularly good.

It’s no secret that the United States goes big for Halloween, but did you know you have us to thank for at least some of the tradition?

Sure, not us personally, but Ireland.

Halloween can trace its roots back more than 2,000 years to Samhain, the ancient Gaelic festival marking the end of the harvest and beginning of winter - a time when the boundary between this world and the Otherworld was believed to grow thin.

Fast-forward a couple of millennia, and Irish immigrants carried many of their customs across the Atlantic, where old traditions evolved into the Halloween celebrations we know today.

And yes, we were carving faces into vegetables long before pumpkins arrived.
We’ll be celebrating Samhain at The Dead Rabbit NY & TX, The Irish Exit Atlanta, and San Patricios, - with a little Día de Mu***os sprinkled in at the latter, too.

Stay tuned for details. And when it comes to picking out your cat ears this year, remember to thank the Emerald Isle.

Today, Dublin’s BAR 1661 was named No. 98 on The World’s 50 Best Bars 51-100 list - the first Irish bar to feature since The Merchant debuted at No. 17 in 2011.

That’s 15 years without an Irish-based bar on the list - and Dave Mulligan and his team at Green Street are the ones to break the drought.

Staunchly Irish and fiercely independent, 1661 has spent years championing Irish drinks, Irish hospitality and the country’s bar scene on its own terms. Dave and his team have done incredible work leading that scene forward, and while we’re delighted to see them finally get the international recognition they deserve, we firmly believe they deserve to be much higher up that list.

We also sincerely hope this isn’t a one-off.

Ireland is home to so many innovative, hospitable, incredible bars - places adored by the communities around them, doing genuinely world-class work and worthy of international acclaim.

Today, BAR 1661 put Ireland back on the list. Here’s hoping they’ve opened the door for more to follow.

In our last artwork video, we introduced you to The Rabbit by Terry Bradley, created just for us in 2018.

Today, it’s the turn of Emma McKernan, an Irish artist based in London.

Emma’s worked on projects with Kneecap, Tayto, Snow Patrol, and more, with much of her work exploring a confident, more elbows-out Ireland, challenging misconceptions around Irish culture along the way.

It’s exactly why we wanted to work with her on our Irish Car Bomb series. Look a little closer at the finished pieces, and you’ll find parts of that history embedded within the artwork itself, including pages from books that informed the work, including Ernie O’Malley: A Life, telling the extraordinary story of one of Ireland’s most complex and influential Republican figures, who later became an acclaimed writer.

She’s an artist we’ve been huge fans of for a long time - and now her work has a home on our walls. Take a closer look next time you’re in.

It’s said that Labor Day marks the unofficial end of Summer and the start of Fall - and we’re ready.

Samhain and Jingle Jangle are still a wee while away, but last week, seven brand-new drinks land on our Taproom menu, alongside seasonal updates to a few familiar favorites - and here they are.

Expect autumnal takes on everything from Sours and Margaritas to Gimlets, Negronis and Manhattans, something a little more tropical, and a brand-new non-alcoholic punch.

And yep… we’re almost ready for turnip-carving season.

When Cillian Vallely walked into The Dead Rabbit twelve years ago, he thought he’d play here for a few weeks. Fast forward to 2026, and he’s still here. Yep, lucky us.

A renowned Irish uilleann piper and whistle player, Cillian has been a core member of traditional Irish music group Lúnasa since 1999, and has toured with Riverdance, Bruce Springsteen, Natalie Merchant, and more.

But there’s something special about a traditional Irish session, he says. There’s no setlist, and nothing is organized - it’s all completely in the moment. Two tunes might turn into five, visiting players passing through New York might drop in, and no two nights are ever the same - and that’s the beauty of it.

Catch Cillian in The Taproom Extension every Sunday from 6pm - 10pm - you’ll be glad you did.

Yesterday, we not-so-quietly launched our new Fall menu.

Down in The Taproom, we’ve seven brand-new drinks, while The Parlor has three new seasonal cocktails, available alongside the full Tradition Meets Tomorrow menu.

And the kitchen’s been busy, too. We’ve got 11 new, revised, refreshed, and resurrected dishes - including the return of one autumnal cult favorite. Yep, she’s back.

Chicken Pot Pie - slow-cooked chicken, lashings of gravy, mashed potato, and cranberry on the side.

From Manchester to Manhattan.

Earlier this year, Jack McGarry headed north to join the SCHOFIELD’S crew behind the bar for Paddy’s Day. Tomorrow night, we finally get to return the favor as SCHOFIELD’S lands on Water Street.

On September 15th, co-owner Daniel Schofield and Head Bartender Jack Mitchell take over our Taproom Extension from 5pm - 8pm, having recently announced their upcoming London opening.

They’re bringing four cocktails with them - the In Bloom, William Wallace, Whoopsie Daisy, and their very own Irish Coffee, made with Teeling Small Batch Irish Wh***ey, illy coffee, vanilla cream, and honey. Howd’s it compare to ours? There’s only one way to find out…

And just like that, The Irish Exit Atlanta is three months old - though it feels like just yesterday we were surveying the site in hard hats.

We opened our doors straight into the World Cup, welcomed fans and film crews from around the world, watched Atlanta Stadium turn back into The Benz, hosted an opening party - and plenty has changed around us, too.

With neighbors like Shake Shack and Cosm, alongside The Mitchell and Hotel Pheonix, Centennial Yards is quickly becoming the place to be here in Downtown ATL.

And with Virgin Hotels and Chops Lobster Bar still to come, we’re in very good company.

Three months down. Plenty more to come.

Yep, Beoga just performed with the one and only Ed Sheeran during his global Loop Tour, but that didn’t stop them from making a bit of time for their old pals here on Water Street, supported by Guinness.

Last week, Damian McKee, Seán Óg Graham, Liam Bradley, Eamon Murray, and Niamh Dunne popped into our Taproom for an impromptu performance - their third time playing live for us - and what a performance it was.

The five-piece have already stopped in Nashville, Chicago, Los Angeles, St. Paul, Toronto, and New York, with Boston still to come.

If you get the chance to see them live, don’t think twice.

How are you spending the long weekend?

Labor Day has been a New York tradition since 1882, when thousands of workers took to the streets of Manhattan for the country’s first Labor Day parade.

And sure, we weren’t around then - but 30 Water Street was, built in 1828 - and John Morrissey was roaming the streets with the Dead Rabbit gang around the same time, too. So, we like to think we’ve got a little in common with the holiday.

We’re open as normal, with plenty of reasons to make the most of that extra day off. Sure, it’s basically another Sunday, right?

Later this week, Christy & Neha are off to CDMX with Condesa Gin for a very busy couple of days. First up, they’ll be supporting San Patricios GAA at Copa Azteca on September 5th, before taking over Café de Nadie on September 6th, 8pm - 11pm.

This music-obsessed bar was listed No. 47 on North America’s 50 Best Bars 2025 and No. 17 in 2024 - known for working with ingredients from the surrounding Xochimilco region, and they know how to throw a good party.

Over the coming months, Jack’ll be introducing you to a few of our stand-out pieces of artwork, starting with this - Terry Bradley’s Dead Rabbit, one of our first-ever commissioned paintings.

This one-of-a-kind piece was created especially for us in 2018, to mark our fifth birthday. We later released it as a limited-edition print, donating a portion of the proceeds to AWARE NI, a charity supporting people affected by depression and bipolar disorder in the North of Ireland.

As Jack explains, we wanted Terry to build upon a character that symbolized the story of the Dead Rabbit gang, and its leader John Morrissey, in rabbit form - and the devil’s in the details.

There’s the American flag, the Irish insignia, the Five Points, and representations of depression, hope, honor, and toxic masculinity. Every time you look at it, you’ll find something different.

Since working with Terry, we’ve commissioned a myriad of artists across disciplines, from photography to illustration, each helping us tell another part of our story - and support the Irish arts.

While the Dead Rabbit print is no longer available, plenty of Terry’s work is - and it’s well worth a look.

Back in July, we announced our third gig with West Belfast comedian, Paddy McDonnell.

The 6pm sitting quickly sold out - so we’ve released new tickets for 9pm - and you’ll want to be speedy about it.

Joining us on September 3rd, Paddy has shared the stage with Frankie Boyle, Jason Manford, Paddy Kielty, and Andrew Maxwell, and has sold out headline shows across the city.

Drawing on stories from his days as a taxi driver to the everyday chaos of family life, his comedy is sharp, relatable, and very funny - best enjoyed with a pint in one hand and a cocktail in the other.
