At Taco Rosa, we strive to select the freshest and finest ingredients available to use in preparing all of our recipes from scratch. We use fresh chilies and spices rooted in native recipes to craft popular items like our baby goat tacos but also our Jidori chicken breast with mole poblano or our fantastic Kurobuta pork. We seek to excel at serving both favorites familiar to locals as well as crafting new, bold dishes. Whether it’s relaxing with one of our many hand-squeezed juices in the morning or having us cater your next event or banquet, we look forward to displaying our dedication to authentic flavor and freshness.

Today, we'd like to take a moment to recognize founder Ivan Calderon for all the incredible work he does in our community. Nearly 30 years ago, he opened Taco Mesa with the mission of creating a platform that allowed him to give back to the community by doing what he loves. Through our restaurants, we've had the ability to give back in partnership with organizations like Save Our Youth Center, Corazon de Vida Foundation, and Operation of Hope Worldwide, and more.
