This delicacy comes from blue crabs harvested just after they molt their hard shell. A tender, fully edible crab with rich flavor and delicate texture—perfect for sushi. Flown in fresh and wrapped in a roll with crisp vegetables, finished with bright Yuzu sauce and soy glaze.
