🍆 Eggplants! Fried are the best! Served on a piece of fresh bread, the oil and flavor soak right in, making a delicious late-summer sandwich.
Paired with Eaters Acres tomatoes and peppers, they also make a yummy pasta sauce served over spaghetti, garnished with fresh basil and, you guessed it, more eggplant!
We love growing eggplants, cooking them, and eating them! You'll find them featured in several The Station favorites, including our Baba Ganoush and Eggplant Hummus Sandwich, as well as in our produce section.
