To our dear guests, from GM Jin Link:
Well… maybe there is something to the year of the Fire Horse. There is certainly no doubt I am feeling some intense and fast-paced change. I’m currently learning that those born in the Year of the Rat, like myself, may be the most affected. I don’t really know what that means in general, or for me personally, but it is with a great deal of mixed emotions that I am announcing my departure from Charcoal. I say mixed emotions because I am heartbroken to be leaving the Team that I am so lucky to have had the pleasure of both leading and being in the trenches with, the industry that I deeply and passionately love, and yet I am also excited for new and completely different opportunities on the horizon.
After 25 years of working in Edmonds community restaurants and staring such a huge change in the face, I find that mainly I just want to thank all of you. Not just the guests at Charcoal, but also the guests of all the Feedme Hospitality & Restaurant Group locations, Rory’s of Edmonds, and Scott’s Bar & Grill. Welcoming you and feeding you has been a great pleasure in my life, and has taught me so many things about myself along the way.
As the sun sets on my time here at Charcoal, I am also excited for some new changes within these walls, and I am so proud to pass the reins off to more than capable hands. I hope you will all be excited to try the cuisine of our new Chef de Cuisine, Eric Stover. His professional reputation certainly precedes him! As for our next General Manager, it could be none other than one of our very own, Sophia Welch. You may have been lucky enough to be served by her when dining at the bar. Her innate sense of hospitality will surely be something you will enjoy experiencing.
My last day here will be Saturday, April 11th. I hope you will come visit before then, it would certainly mean a lot!

We are so sad to see Keigan, our Chef de Cuisine, leave us to pursue his next adventure in life. Words cannot express how thankful we are to have him here since the very beginning. We sincerely hope you enjoyed his food.
