Happy Crappie Year 2024!

Is it the best time to teach the next generation take them out feel the BIG THUMP! Thanks to Felipe and Darvione for the fish and we end up with 8 slabs the less from Felipe.

Tired of deep fried crappie? Try this fish cake instead.

INGREDIENT A
6 Crappie fillet
1/2 cube Chicken Bouillon
1/2 tbsp Salt
1/2 tbsp White Pepper Powder

INGREDIENT B
200g Cornflour
4tbsp Cooking Oil

Fish Paste Preparation
Using a food processor, blend Ingredient A and B together until you get a smooth paste. Remove the fish paste from the food processor. Using your hands, gather the mixture together and slap it on the side of a large mixing bowl 60-70 times. This helps to give the fish cake a springy, bouncy texture.

Fish Cake Preparation
Divide the fish paste into 3 portions lay a piece of food wrap film on the plate place then take one portion of fish paste and take a piece of film lay on top of the fish paste press it down to flat it out ready to cook.

Cooking
Heat a pan with oil medium heat, remove the top film and take the bottom film transfer it to the hot pan put the fish cake in and let it cook. Retrieve when both sides turn golden brown. Ready to serve best with hot sauce.
