Scalloped potatoes au gratin are my favorite Easter side dish! Thinly sliced potatoes baked in a simple creamy sauce until tender with a lightly golden top.
Can be assembled ahead, which helps things manageable and pairs well with ham, lamb or beef. It's the perfect Easter side dish.

Lately, I have been on a Guacamole kick. It just keeps ending up with it on the table with a bag of chips. Simple, familiar, and always satisfying. This is one of those things that I can never get enough of.
I'm a purist- no tomatoes. No big chunks of onions. Just avocado, lime, cilantro, seasoning, and a pinch of jalapeño.
