Viably's Sr. Director of Growth, Partnerships, and Marketing, Christy Hurlburt, delivered a keynote on localizing food waste processing at the Food Waste Solutions WNC Summit this week in Asheville, NC.
The Summit brought together composting operators, municipal planners, community organizations, and industry leaders to address food waste challenges across Western North Carolina, including the ongoing recovery work following Hurricane Helene. Panels covered composting trends, rescue and redistribution programs, consumer education, and how to better connect resources to communities in need.
The conversations happening at events like this one reflect where the organics industry is doing its most practical work. On the ground, in specific regions, with the real constraints that shape what recovery actually looks like.

International Compost Awareness Week is next week, May 3-9. It is a useful marker for where the industry stands on organics recovery.
Roughly 70 million tons of food goes unsold or uneaten in the U.S. each year. The majority of that material, an estimated 60 million tons, ends up at waste destinations rather than moving through composting or recovery pathways. The composting and organics processing infrastructure to recover a larger share of that material does not yet exist at the regional scale needed.
Regional processing capacity, permitting constraints, and feedstock contamination are the primary factors limiting how much actually does. Closing that gap requires processing systems that are sized and configured for the material streams and operational realities in each market. That is the work Viably supports.

For municipalities building out organics programs, getting the material processed cleanly is where diversion targets are won or lost.
Screening is one of the most important steps in that process. It separates finished material from material that needs more time, removes oversized contaminants, and protects the quality of the end product going to market or back to the land.
