For our back bar spotlight this month, DJ chose to highlight Mithradates Vino Amaro by

“I’ve always loved amaro, and I think the guys at Forthave are doing an awesome job of modernizing it while keeping its rich and varied heritage alive. All of their botanicals are sourced from Upstate New York with meticulous care and put on beautiful display in their products. The Mithradates is based on an herbal elixir recipe from the 1st century BCE. It’s a vino amaro; being wine-based drops the ABV a bit and gives it a soft and pleasant acid. It’s super versatile as an aperitif, a dessert pairing, or even a fun accompaniment to a red meat entree.“

Adapted from the 19th-century Rx Julep format, this is the 8th installment of our prescription cocktail. Transforming it into a springtime Manhattan style drink, while still incorporating whiskey, brandy, and mint.

Instead of traditional brandies, such as cognac or armagnac, we are using a combination of a very contemporary stone fruit spirit from Empirical, and a Ratafia de Champagne from a legendary Champagne grower.

We’ve been busy celebrating! Big congratulations to for winning regionals for the South at USCC this week! And we are so honored to be a part of the 2026 Spirited Awards Top 10 Regional Honoree for Best Restaurant Bar in the U.S. East.

Our whole team spends every day striving for flawless ex*****on and has a deep respect for every season, guest, and farmer that we get to work with. Kimball House can be a place for a full on celebratory dinner as well as a place to pop in for a drink after work.

Very exciting to be on this list with so many amazing spots, and we’re so proud to represent for the southeast!

It’s chef Will’s last day!

Will’s journey at kimball house started in the oyster room and ended with being our sous chef.

One of Will’s many additions to the restaurant was introducing the question “May I call?” when you need to ask someone a question during service. This may seem like an extra step, but during a busy Saturday in the kitchen, everything can be a mechanical and frenetic whirlwind of an operation. Just adding that extra level of respect to inquire “are you prepared for me to ask you something that might throw a wrench into everything you’re doing” and allow the receiver to stop what they’re doing and say “yes, what’s up?” totally changed the way we speak to each other as a team for the better.

Will, your leadership and poise will be missed greatly. We wish you all the best of luck on your next chapter, and you can always call for us if you have a question. 📞❤️
