This recipe takes patience but is easy to make. Slap it in the crockpot overnight, and it will be waiting for you in the morning. Give these vegan pistachio and eggplant crumbles a try! 🍴🌿 Your taste buds will thank you! What is your favorite nut for meat replacement? I have tried walnuts, pecans, and now pistachios. Ingredients2 cups of soaked pistachios (soak them overnight in the refrigerator)One chopped red bell pepperOne chopped orange bell pepper2 Tsp of minced garlic 1/4 of chopped eggplant 1/2 chopped white onion3 Tbsp vegan butter or avocado oil1/4 cup of blended chipotle in adobe sauce.1 1/2 Tbsp bouillon organic vegetable seasoned vegetable base ( I use the Better Than Bouillon brand.) vegan versionStep 1. Soak pistachios for overnight.Step 2. Blend pistachios in a food processor with eggplant and garlic. Step 3. Add crumbles, green bell pepper, orange bell pepper, onion, vegan butter, blended chipotle, and bouillon vegetable base to the slow cooker. Cook on high for 1 hour and mix. Change the temperature to warm and slow cook for 12 -14 hours. Slow cook until the pistachios and eggplants are soft.
