Once the gain of your channel is set it should not need adjusting throughout the event. Just use faders to increase and decrease volume. You want the gain set so that turning up the fader will put you at the point just prior to feedback.
Learning EQ is essentially learning sound frequencies. A must to reduce Live sound feedback.
