Stop buying store-bought dressing. 🙅🏻♀️
This 2-minute Thai salad dressing is fresher, cheaper, and tastes SO much better. Fish sauce, lime, a little heat — it’s everything you need.
My family has made a version of this forever. Now it’s yours.
TRADER JOE’S SAUCES I ACTUALLY RECOMMEND 👇
As a Thai chef, I’m pretty picky about bottled sauces—but Trader Joe’s has a few gems worth keeping in your pantry.
🫚 Thai Sweet Ginger Sauce adds a fresh, savory kick to stir-fries, marinades, and noodle dishes.
🌶️ Sweet Chili Sauce is a versatile favorite for dipping, glazing, and adding a touch of sweet heat to just about anything.
Are they traditional? Not exactly. Are they delicious, convenient, and worth grabbing on your next Trader Joe’s run? Absolutely.
What Trader Joe’s product should I review next? Let me know in the comments! 👇
10 minutes. One pan. Big Thai flavor. 🇹🇭🍜

I delivered lunch to Jessica, the founder of — and I had no idea that delivery would change everything. 🍜🙏
Turns out she’s been a Mintfanatic for years! 💜 We spent the whole time talking about her stunning bracelets handcrafted in Thailand and everything just clicked. Two women, two brands, both with a deep love for Thailand and all its beauty… and by the end, we were already dreaming up something special together.
A collab is coming that I cannot WAIT to share with you. 👀✨
But I want to know — what do YOU think a Thai chef and a Thailand bracelet brand would create together? Drop your guesses below! 👇💜
Stay tuned, because this one is going to be beautiful. 🙏 Mint

✨ Honored to speak at the D CEO Women’s Leadership Symposium 2026 and share my journey of building a life and business centered around purpose, people, and impact.
As I reflected on the theme Built to Last: The Long Game of Leadership, I was reminded that the most meaningful legacy we leave isn’t what we build—it’s who we build.
Over the last 20+ years, my path has taken me from Thailand to Texas, from chef to entrepreneur, author, mentor, and community builder. Through every chapter, one lesson has remained constant: leadership is about serving others, creating connections, and helping people discover their own potential.
Whether through food, mindful eating, retreats, mentorship, or simply sharing a meal, my mission has always been to feed souls and foster transformation. Businesses evolve, seasons change, but the lives we impact become our lasting legacy.
Thank you to D CEO, Texas Woman’s University, the Texas Women’s Foundation, Girl Scouts of Northeast Texas, and everyone who made this event possible. I’m grateful to have shared space with so many inspiring women leaders who are shaping the future through courage, resilience, and purpose.
💜 Legacy through people. Purpose through service. Leadership through love.
Toasted rice powder is the secret ingredient that adds a nutty aroma and authentic flavor to so many Thai and Lao dishes. ✨
It’s easy to make at home and tastes so much better fresh!
Have you ever used toasted rice powder in your cooking?
Kua G*i is the smoky, wok-charred noodle dish you find on every street corner in Thailand — but almost nobody makes it at home.
The secret? High heat + the right sauce = that deep, smoky flavor you can’t stop thinking about.
I make mine with my own Gluten Free Stir Fry Sauce — it gives you that authentic Thai street flavor without the gluten. No shortcuts. Just real Thai cooking. 🇹🇭

The secret? My stir fry sauce does all the heavy lifting. Bold, savory, just the right amount of kick — it’s the kind of pantry staple that makes every weeknight feel like a restaurant night. 🙌

Drunken Noodles (Pad Kee Mow) — Thai restaurant style, right in your kitchen in 10 minutes. 🔥
This is one of my all-time favorite noodle dishes. Smoky, spicy, and packed with fresh Thai basil — every bite hits just right. The secret? A good black soy sauce. It’s what gives Pad Kee Mow that deep, rich color and that signature wok flavor you can never quite get from takeout.
The good news — my black soy sauce is available now at chefnikky.shop. And if you want the full recipe with all my tips, it’s in my cookbook Thai Food and Travel with Chef Nikky. Link in bio! 📖
