Every great restaurant starts with a story...
For Chef Matt Balke, that story begins in Uvalde, Texas. The town where the name Encina was first used and the place that shaped his love for honest, ingredient-driven cooking.
After graduating from the Culinary Institute of America and training under some of Dallas’ most respected chefs, Matt returned to Oak Cliff to build the restaurant he always imagined.
