Kindred, it has been a VERY big week for us over here! The fantastic Fox Peña, A.K.A Foxcito form Food With Foxcito, came through, and we had a very nice time, and he gave us a rating of 9.3, which is SUPER good, and if you follow him, YES, WE DID GET A "FATHER GOD"! I want to take a second to thank everyone who has helped us get here. Big Poppa Chris, Miriam, Yaz, Zach, Cory, Aunt Linda, Tony from Crankshaft Coffee Roasters, 3d Baking, Northwest Meats, Benjamin Harrison from Happy Foods, Happy Foods - Edgebrook, Mona's Sweet Spot, and of course, the kindred, the legionnaires, our guests. We appreciate you all so much, and we will never, ever stop creating the welcoming space that you have come to expect. We love you, we see you, and we can't wait to take care of you!

Shanghai Red Cooked Chicken Hash: People loved the Pork Belly version of this dish, but it was too rich for some folks. Thus, we give you this! Chicken wings red braised in the Shanghainese style, starting with a caramel base that we infuse with asian style aromatics and spices, and then braise the chicken in until it is fall apart tender. We are serving it over our house browns, with two eggs and toast, and a side of braised bok choy laced with oyster sauce and fried garlic. Yo, if you know us, then you KNOW how this is gonna get down! $19

Bacon Jam and Goat Cheese Omelette: A three egg omelette filled with home made caramelized onion, bacon, and maple syrup jam, whose sweet nature is opposed by the tangy, citrus notes of fresh goat cheese. Frankly, fam, Bacon Jam is MAGIC! Come try ours and see if you don't want to put it on EVERYTHING! Comes with house browns or fruit and toast! $18

Stuffed Fruity Pebble French Toast: Y'all, you are just NOT ready! Chef Cory came up with this because he loves you and wants you to be happy. Our thick cut Shokupan toast soaked in a fruity pebble cereal milk based custard, crusted in crushed Fruity Pebbles, griddled golden and perfect, and then filled with luscious cheesecake filling. You KNOW you promised your inner child this dish, someday! It is time to honor that promise! It's BONKERS! $16

Watermelon Mint Lemonade Cooler: A perfect balance of sweet and tart for what is supposed to be a suffocatingly hot weekend! Fresh watermelon juice infused into a house made lemonade and finished with fresh mint! You couldn't BE more refreshing! $7

Y'all, I would usually be posting a hip hop classic here, but I have been at work FOREVER, and I am too tired. Let us just talk about this weekend.

Specials, 6/20 to 6.26....

Chicken And Waffles: But not how you think! We b***d out the flats and stuffed them with our Lumpia Shanghai filling. We then bread and fry those wings, and we serve them over a malted vanilla waffle with our signature "Soyrup". It is sweet. It is savory. It is EVERYTHING. It is one of our best recieved specials. And we are doing it for the DADS! We love y'all! $22

Advanced Steak And Eggs: I am going to make this super simple. It is a 10 oz. Prime Ribeye, prepared using our super secret method, served with two Twice Baked Potato cakes, 2 eggs, a side of Irish beans, and toast. You really want to put the beans on the toast. It's how our Hibernian brothers and sisters get down! $32.

Corn Chowder: I usually only do this once a summer, but I have been getting some fantastic early season corn, and I REALLY wanted to make it, so.....It's Bacon, Potato, and Corn chowder, and it tastes like summer, and you should get some. $8.

All right, kindred, legionnaires, friends, and ECS soldiers, we have to talk about this weekend.

It's father's day, and we are going to go all out for the Dads out here. We are going to do not one but TWO of our best received specials in honor of the guys who are putting in that work, with love and devotion. And as always, we see ALL Dads! Mom dad's, two dads, single dads, dads doing it from a distance, stay at home dads, and most especially the dads who are just barely hanging on and who are going through a rough time right now. We see you. We respect you.

SPECIALS, FATHER'S DAY EDITION, 6.20-6.26

The DOPEST chicken and waffles: We are bringing back one of our most innovative and requested recipes! Our Lumpia Shanghai stuffed chicken wings served with our brown butter overnight yeasted waffles. These wings are b***d out and then stuffed with the filling from the totally irresistible Filipino dish, Lumpia Shanghai. This time, we are blending ground pork and our own house made longsnisa in the mix! Then we hit them with our chicken rub, bread them, and fry them, and we serve them with a 24 hour brown butter waffle cooked golden and crispy. Oh, and they come with "soyrup" our totally original blend of maple syrup and soy sauce that pairs, somehow, with both of these things! Big James, Little Vic, Ariel, Taylor, this one is for you guys! Seriously one of the best things we have ever cooked. Come get it!

Shelfed Up Steak And Eggs: We know that Dads love steak, so we are bringing you Prime Grade 10 Ounce Ribeyes prepared in our HIGHLY classified style, with Boxty Pancakes (think a twice baked potato in the form of a latka and you aren't far off), two eggs, home made Irish style beans, and toast. Pro tip: PUT THE BEANS ON THE TOAST! IT IS AWESOME! YOU WILL NEVER BE THE SAME. And oh yeah, two eggs. Dakota, Big Gary, Paul, this one is for you guys! Come get it!

I am also waiting to see if I can make a third special this weekend, it depends on if I can get good enough ingredients.

Puffy Taco: Home made ground beef picadillo on a crispy, golden Navajo Fry bread base, topped with chihuahua cheese, lettuce, tomato, and home made tomatillo salsa. $15

LBC Omelette: Leeks, bacon and cheddar in a three egg omelette served with house browns and fruit or toast. $17

Lemonade: Fresh squeezed county fair type lemonade, cool and refreshing. $7

First of all, Happy Pride to all of our Rainbow Legionnaires! Let us, as we always do, take a moment to recognize the brave act of defiance that is the reason for the season. Stonewall Rebels, we salute you! And Rainbow Legion, we see you, we love you, and we celebrate you!

Second, this post is late because I had the chance to go see our very own Diner Regular Jeremy Owen's fantastic show at the Steppenwolf Theatre last night, and it was amazing. Talented storytellers relating tales which all have a twist. It is SUPER FUN, and they are doing two shows today, so if you can, grab tickets and GO!

Kindred! What a week we are having! We caught a catering gig that let us stretch our wings, and we are here to pass some of that value ON TO YOU!

SPECIALS, 5.30-6.5

Couvillon Stew: Okay, everyone, we have seen how you come out for gumbo. We have seen how you trust us with hashes from far and wide. We got a new one for you this week. Couvillon is a Creole/Cajun corruption of the French "Court Boullion" which is a fish stock used to poached delicate fish filets. Here, it is a New Orleans variant. You can tell it's Creole rather than Cajun because it has tomatoes in it. It starts with a dark roux, then the Cajun trinity, then garlic, then stock and tomatoes, and when all that comes together, we add tiny bay shrimp, crab, and sous vide cooked red Snapper filets. That delicious mix is served up over painstakingly cooked Basmati rice, with a spray of green onion as garnish. This thing is a bowl full of goodness, and if you like gumbo, you won't believe this bad boy! $19

German Pancakes: A first special from my beloved Godson Zach! He waxed ecstatic about how he used to get this all the time, and I just couldn't deny him another cut at it, as I have never been able to deny him ANYTHING! It's basically a Dutch Baby style raised pancake, puffy and golden, served up with a fresh blueberry coulis, because blueberries are real good with pancakes! We might just put a little squeeze of lemon on there for good measure! Whatever. It's DELIGHTFUL! $15

Let us first remember the fallen this weekend, all those who have given their lives in service to the people of this country. That said, let's talk about these SPECIALS!

BREAKFAST "QUESADILLA"- Chef Cory got this idea, and y'all KNOW that when Cory puts his mind to it, he comes up with the illest dishes ever! This is a quesadilla filled with two scrambled eggs, your choice of protein, and melty chihuahua or cheddar cheese, but then also, our signature house country gravy. And OH YEAH, it's served in a FOLDED PANCAKE instead of tortillas! Lord help us all! With house browns. $18

SHANGHAI HASH- I've waited a long time to bust this out. Red Cooking is a Chinese braising technique where you make a very flavorful braising liquid with a brown sugar caramel, soy sauce, shaoxing wine, Chinese aromatics, and loads of whole spices, and then braise the protein low and slow until it is ultra tender and the sauce has reduced. In this case, we used pork belly, and LET ME TELL YOU, IT IS AMAZING! Fragrant, sweet, savory, unctuous, just EVERYTHING. And then we pile that on our house browns and serve it with a side of bok choy with oyster sauce and fried garlic, and two eggs. Come on and see how the Chinese do comfort food. It will blow you away. $20

Aunt Linda's Black and White Cookies: The ICONIC deli/bodega cookie of New York City! It's kind of a cake/cookie hybrid topped with equal parts chocolate and vanilla frosting. This is one of my very favorite sweets, and I hope you will all come and try it, because Linda made it perfect and it will haunt you for the rest of your days. $7

We are open regular hours tomorrow, until 1:30 on Sunday, and closed on Monday. Cone in and get this goodness! See you soon.
