SHES A BADDIE OR WHATEVAAAAAAAA. Took us seventy three years to perfect it (but whos counting) and I think we have nailed it- I would also like to publicly say that croissants (to me at least, im not a trained baker, I learned by myself every single thing I know) are about so much more than a recipe. Its proving, baking temps, humidity, salt in the butter, temps of the butter- all. The . Things. And one little variable can make or break it. Sydney has grabbed everything weve learned in the last two years and organized it and tweaked it to get us to a point where we can start making them at the bakery without clenching from anxiety.
