Where are they??
How do they spend their time?
How do you talk to them??
How much will they buy?

I had some of my best dreams while I was sleeping in class at school. I successfully cheated my way through 7th grade...both times. If you are at all like me then you probably didn't enjoy school or tests. It is part of the reason I got into kitchens and started my own business. If you did enjoy school (I won't hold it against you.) then you probably look for any advantage you can get and study as much as you can to be ready in advance. That's cool too. If you're not 15 minutes early you're late.
On time means uniform on, apron on, knives meticulously laid out station cleaned and sanitized, espresso in hand and checking the production list already when the minute hand hits the start time of your shift.

Packaging is so important. People eat with their eyes before they taste anything. Make it beautiful but don't break the bank. Find something that compliments your product, grabs people's attention and draws them in but be careful to adjust your packaging to the sales channel you plan to use. Packaging for a product meant to be in the grocery store will be different than the farmers market or a product that you plan on shipping. They all have their problems that need to be anticipated.
You have about 3 seconds to get someones attention at a grocery store.
It has to be durable if you plan on shipping it.
It needs to be functional and beautiful as well as Eco friendly for a farmers market.
Keep that in mind when you are considering your packaging.
