The Matzo Project introduces carefully made, artfully packaged, legitimately scrumptious matzo to a stale, outdated, dusty corner of the marketplace.

We set out to make an alternative to a culturally loved, but traditionally flavorless cracker and instead, we got a super-snappy, extra-flavorful, crazy-versatile snack that goes with every single thing we've tried to put on it. (We are not making this up.) While it currently languishes in the 'Ethnic Food' Aisle, our hope is to help matzo claim its rightful spot in the Cracker Aisle; nestled between the Saltines and the Pita Chips.

Golden, toasty, coconutty little clouds. ✨
Chocolate-dipped macaroons

Crisp edges. Chewy centers.
Half dipped in chocolate, finished with a little fleur de sel.
These don’t last.

What you need:

• 8 egg whites
• 1 cup sugar
• 1 tsp salt
• 2 tbsp honey
• 5 cups unsweetened shredded coconut
• 1/2 cup Gluten Free Golden Cake Mix
• 1 tbsp vanilla
• Fleur de sel (for finishing)

Preheat oven to 350.

Over LOW heat, mix egg whites, sugar, salt + honey until combined (NOT hot).
Add remaining ingredients + stir to an oatmeal-like consistency.
Let cool.

Dampen hands, scoop onto parchment (leave space).
Bake 18–20 min until golden.

Cool → dip in melted chocolate → sprinkle fleur de sel → chill → bring back to room temp.

Try not to eat them all before guests arrive.
