If you poach or boil them or even scramble! You can batch them out for a few days to come and have them at the ready.
Fun easy protein to add to any flavor profile for that 🤌🏼balance.

First up-
Kimchi Jiggae inspired Carrot base with Edamame + Asparagus in Chili Crisp on Little Gem Wedges. Egg.
•
Another Wedge Situation with a Marinated 6 min Egg and a Cauliflower + Beet Salad over a Broccoli Sauce
•
Followed by a Stewed Escarole in Carrot Pepper Sauce with Tomato Salad in Anchovy Vin. + Celery + Poached Egg
•
Next few are similar but one with a scramble!
•
All the same, just make eggs and put chili crisp on everything. Always have sauce. Or soup. Or both.

Spiced Carrot Pepper Soup with TOPPINGS.
But for real I love a good crunch with the comfort of soup feels and so there we have a spring roll situation (again).
•
“everything sauces” have been a recent love of mine and they pair seamlessly with the crunch and texture of the veggies but still with the flavor profiles I pair with a soup base and it’s toppings.
Can I get a hell yeah?!

Snack Soup?
I love a good velvety soup, as we know, but I love it as a base for crunchy veggies.
I used a spinach curry as a thin base layer for celery, radishes and even a peach dusted in furikake. Sprinkled a little cheese and wedges of little gems.
Some might not be here for it but I AM.
Eat your veggies kids!

Spring Roll Summer Y’all

Spring rolls are something that I keep in my fridge all the time and in constant rotation.
As a lover of soup and cozy foods, it’s the perfect vessel for being able to satisfy that in this heat.

Summer Bowls of greatness for when I’m hot, the house is warm, outside is unbearable.

Spinach Miso Broth, over greens, with cucumber, radish, pistachio.
EDIT
Added chili crisp, some yogurt and some leftover seaweed salad.
•
Building bowls like this are my favorite because it uses up what you have in your fridge. It also keeps you satisfied when it’s a late night dinner and you’ve had a long day.
•
I keep sauces, soups/broths, roasted or seasoned proteins or vegetables at the ready so I can throw these together when I’m just not sure.

PORK BELLY
It was a fun little journey.
Anyone who knows me knows that I do not prefer pork. However, I do love a good cut of good quality meat and fat. Yes. The fat.
This one was a fun experiment and one I will do again and maybe with other meat options as well.

I dry brined it for about a week in the fridge then washed it off, roasted it, sliced and marinated it.
From there I seared it but you can equally keep in the fridge ready to cook as you wish.
Served with cabbage and fresh veggies.
So good.
Now I need to hunt down some lamb belly.

LEFTOVER COMFORT
A bowl of cabbage and many greens dressed in Thai green curry I had on hand.
Topped it with half an avocado from last night and an apricot that was getting soft. Drizzled it all with some chili oil and MY LORD. It was so good.
PSA: don’t order out when you don’t need to. Use what you got people!

Romanesco.
My absolute favorite.
This green love affair bowl with Romanesco salad with pistachio and cilantro. Paired with avocado, basil ranch all over spinach.
Swipe and you’ll see I added dates and a soft egg that I did not peel delicately. Still delicious and devoured just the same.

It’s been a while!
With all the Covid outbreaks, cold weather and getting through the holidays, simple food has been my go-to.
•
This is a broiled heirloom tomato steak over Parmesan cauliflower purée. It’s all over a bed of dressed spinach and cabbage with a yuzu miso vinaigrette. Topped with pepitas.
•
The heat of the tomato slightly wilts the greens and warms the smooth cheesy purée.
