- 400g fat free milk
- 40-45g monk fruit sweetener
- 5g (1 tsp) vanilla bean paste
- 5g (1 tsp) Black Raspberry flavoring (can sub with 40-50g of both raspberries and blackberries)
- A pinch of salt
- 1g (¼ tsp) xanthan gum

Instructions:
1. Blend all ingredients for the base and freeze (at least 16 hours)
2. Run your pint under hot water for at least 60 seconds
3. Spin on “Lite Ice Cream” setting
4. Spin on “Respin” setting until it reaches your desired consistency

High Protein Sweet Potato Taco Bowl 🍠🌮
Ingredients:
- 2 sweet potatoes
- avocado spray oil
- 1 lb lean ground beef (I used 96/4)
- 100g avocado
- 100g nonfat plain greek yogurt
- 30g (2 tbsp) cowboy caviar salsa (can sub with any salsa)
- chopped cilantro
Seasonings to taste:
- salt
- pepper
- garlic powder
- onion powder
- smoked paprika
- oregano (or italian seasoning)
- cumin
- chili powder
Per bowl: 690 cal 59g C, 17g F, 62g P, 14g fiber
Instructions:
1️⃣ Roast the sweet potatoes.
Slice your sweet potatoes in half lengthwise and place them cut-side down on a parchment-lined baking sheet. Roast at 400°F for 50–60 min, until they’re fork-tender and caramelized on the bottom.
2️⃣ Cook the beef
Cook your ground beef however you like. My way: smash 1 lb into a cold pan with a touch of avocado spray, turn the heat to high, and let it sear completely. Season with all the seasonings above (or just use taco seasoning). Flip it all at once, then break it up and chop into your desired crumble size.
3️⃣ Build the bowl
Lay your sweet potato down and mash it. Top with the ground beef, avocado, greek yogurt (higher protein, healthier swap for sour cream), cowboy caviar (sub any salsa), and cilantro. Enjoy!
