sits three kilometres down Mae Ram Phueng, halfway along the beach. It's run by Ake and — a couple who work together and train together. Most evenings they roll with us on the mat. Most mornings, Psy is in the kitchen well before the first customer arrives.
She goes fully in. Kitchen, mat, anything she puts her mind to. The croissants are the current example. Eight attempts in. Laminated, golden, the proper shape. Psy notices things the rest of us don't. So they're not on the menu yet. When they are, you'll know.
Coffee that's been thought about. Sourdough with a crust that holds.

The garden collects things. Some of them have been here longer than anyone can account for — a crane, a rooster, a boy who's been laughing at something for years. Nobody's ever found out what.

Ten minutes from Mae Ram Phueng Beach, Rayong.

Started jiujitsu at sixty. Back on the mat at sixty-five.
Met Sushi Mike — .sushimike — at Tree Roots in 2025. Restaurateur. Vegas. LA. The kind of energy that fills a room without trying.
When he messaged in early April to say he was heading back, he was straight on the mat the first night.
One Monday we cooked for the team. Mike made poke. I roasted some Tajima wagyu from . Pys and Khan added a Japanese curry and a caponata. Four cuisines, one table.
Before he flew out I asked him who he’d tell about the retreat. His answer came back clean:
“Comfortable. Non-pretentious. Low-key.”
I couldn’t have written it better. So I didn’t.
