This is a dessert I did for a guest inspired in the drink “Orchata”. I did a sesame seed and coconut sorbet with sesame seed candy shavings on top and Ginger “Cucas”. It have a nice creamy and crunchy texture and balance it.

Plantain is one of the staples of my Puerto Rican culture and sweet plantains are my personal favorite. I wanted to make the plantains the star by adding flavors that complement or enhance the flavor of it.
I did a Grill Skin On Sweet Plantain with a Sauce (made of Sugar Cane Vinegar, Sautéed Shrimp Paste, Aji Caballero and Sofrito Jus) and Cassava Cracker for you to get a balance dish.
