HONEY CHILLI LOTUS STEM…Homemade Honey Chilli Lotus Stem…Perfect for a starter 😋😋
Method:
1.Take 250g lotus stem,peel it off and cut into thin slices.Soak the slices into water,so that if mud is there,it will properly washed.Them strain the water and put it in a mixing bowl.
2.In that bowl,put 2tbsp plain flour,3tbsp corn flour,1/2tsp chilli powder,1/2tsp coriander powder,1/2tsp black pepper powder,1tsp ginger garlic paste and salt to taste.Mix all properly.
3. In a kadhai,heat the oil for deep frying.Put lotus stem slices one by one,fry till when it turns to light brown colour(don’t fry it for longtime,otherwise it will be hard) and keep it aside.
4. In a sauce pan,put 2tbsp cooking oil.Then put 2tbsp finely chopped garlic and fry till garlic turns to light brown colour.Then add 1tsp sesame seeds,sauté it.
5. Add 2tbsp tomato ketchup up,1 1/2tsp red chilli sauce,1tsp soy sauce,1tsp vinegar,mix all.Add 4tbsp water,pinch of salt and 3tbsp honey,mix all.
6.Then add corn floor slurry(in a bowl mix 1tbsp cornflour and little water,mix).When the sauce thickens,add fried lotus stem.Mix all properly.Take it out in a serving plate and garnish with few sesame seeds.
Now yummy lotus stem starter is ready to serve hot 😋😋

MANGO CHILLI MOJITO…Ripe Mango Mocktail…As it’s going to end the mango season,I thought to try this mocktail.I made and it’s so refreshing.
Method:
1. For 1 glass(150-200ml),in a motor and pastel take 5-6mint leaves,half lemon(cut it into thin slices),1/2green chilly(optional)(if you want more spicy),mash all roughly.
2. Take glass,rim it with chilli powder and salt.Then put mashed lemon and mint leaves,few cube sized cut mango pieces.Then put 3tbsp mango puree,pinch of chilli powder,pinch of salt and 1-2 ice cubes.
4.Lastly add sprite or soda(if you are adding soda,add sugar powder as per your requirement),mix all.Now refreshing mango mojito is ready.

LAU PODAPITHA..Bottlegourd Podapitha..Traditional Odia Dish..I made this on the occasion of Raja festival…Raja Festival is a odia festival to celebrate womenhood.Podapitha is a must dish in this festival.
Preparation:
1.Soak 3 cups of dosa rice for 3-4hours.In a blending jar put the rice,1 1/2cups of grated coconut,blend it to a smooth paste just like dosa batter.Keep it aside
2.Take 500gm bottlegourd,peel it off and make it into small pieces.In a pressure cooker,put the bottlegourd,1/2cup of water.Cook it for 4whistles in medium flame.Then put it with the water in a blending jar and blend it into a smooth paste.
3.In a motor and pastel,take 1/2tsp black pepper,1/2tsp saunf,4-5 elaichis,2inch ginger.Then mash it and keep it aside.
4.In a kadhai,take 3tbsp ghee.When ghee heats,take cashews,almonds,peanuts (2tbsp each),4tbsp raisins,2-3tbsp chopped coconut.Roast all for few mins and keep it aside.
5.In the same kadhai,take 2cups of jaggery powder,add 4tbsp of water.When jaggery melts,add bottlegourd paste.Cook for few mins.Then add mashed elachis,black pepper etc,roasted dry fruits(keep few for garnishing),mix all.
6. Then slowly slowly add rice paste,keep stirring continuously.So that no lumps will form.Then keep stirring for 10-12mins till it will not stick on kadhai.Add 1-2tbsp ghee,mix it.
7. In a cooker,put banana leaves or parchment paper.Grease it with ghee,so that it will not stick in cooker.Then put the batter on it and spread it evenly.Rest dry fruits put on top of the batter.Close the lid,take out the whistle.
8.Take 1 thick tawa on gas,keep cooker on top of it.Then heat it on medium flame for 5mins,then cook it for 1hour on low flame.Then allow it to cool completely.

NO SUGAR & NO CREAM MANGO ICECREAM…MANGO ICECREAM…Seasonal Icecream..Make this in mango season and eat it without any guilt because there is no sugar and it’s healthy 😊😊
Method:
1.Take 8-10 almonds and 6-7 seedless dates,soak them in water separately for 2-3hours.Then remove the peels from almonds.Take 6-7strands of saffron and soak it in 2tbsp warm water(it’s for colour only and completely optional).
2.In a mixing bowl,take 10-12cashews,almonds,dates,2tbsp oats,half cup makhana,400ml lukewarm warm milk and soak it for 20-30mins.
3.In a blending jar put it all,saffron water and 1chopped mango.Then blend it in a smooth texture.
4.Then transfer the mixture in any container,put few chopped mangoes and mix it.Then fridge it for 6-7 hours.
Now super delicious healthy icecream is ready 😋😋

MANGO BHAPA DOI…Steam Mango Dahi…A sweet bengali dish..I tried it first time,so I did not know,took big bowl for steaming and quantity was also less that’s why it did not come out in a proper shape.But taste wise it was so good.So try this mango recipe also.Here I am writing preparation by increasing quantity of ingredients 😊😊
1. Take 1kg curd,put it in muslin clothes and tie it tightly.Then put it in strainer and keep the strainer in a bowl.Put one heavy thing on top of the curd.Keep it like this for 2-3hours.Like this all water will come out from the curd.
2. Take few strands of saffron and put it in 2tbsp warm water.Keep it
3. Then take the curd(it will look like cottage cheese) in a bowl,add mango puree(1 alphonso mango,medium size),5tbsp condensed milk,soaked saffron water and 1/2tsp elaichi powder.Mix all properly.Make sure there is no lumps.
4. In a cake tin,put parchment paper.Put the mango mixture in it and tap it.Cover the tin with aluminium foil.
5. Then in a steamer,boil the water.Then put the cake tin in it and cover it.Steam it for 30mins on low flame.Then switch off the flame and allow it to cool
6.Then keep it in fridge for 3hours.After this cut the edges and demould it on a plate.Garnish with few mango pieces,chopped almonds or pistachios.
Now super delicious mango bhapa doi is ready to eat 😋😋

MAKHANA & CASHEW KULFI…NO SUGAR MAKHANA & KAJU KULFI…Healthy Kulfi for this hot season…
Method(For 10-12 kulfis)
1. In a small bowl,take 3tbsp hot water,10-12 kesar strands and soak it.
2. In a blending jar,take 1cup of makhana,1/2cup cashews,1/2cup milk powder,elaichi powder(5-6 pods),3cups of toned milk(normal room temp or cold milk),kesar water with strands and 7-8 seedless dates(if you want more sweet,you can add jaggery powder or honey).Keep it for 15-20mins for soaking.
3. Then blend it all and pour it into a bowl.Then add finely chopped almonds,pistachios,cranberries (2tbsp each).Mix all and pour it into kulfi mould and then keep it in fridger for 7-8hours.
Now healthy kulfi is ready 😋😋

FRUIT POPSICLE..NO SUGAR FRUIT POPSICLE…Homemade Popsicles to beat the heat 😀😀
Take 1/2cup of chopped mangoes,1/2cup of chopped watermelon(you can take fruits of your choice),then fill half of the popsicle moulds with chopped mangoes and watermelons.Then rest fill with the coconut water and fridge it 4-5hours.
Now delicious fruit popsicle is ready 😋😋.Kids and adults both will love it 😀

AAM PANAA..RAW MANGO JUICE…Refreshing Drink In Summer
1. Take 3 medium size raw mangoes,put mangoes and water in a cooker.Cook it for 2 whistles on medium flame.Allow it to cool.
2.Take out mangoes,put 3cups of water.Take out mango pulp in water.Then put it in a blending jar,put half cup of mint leaves,1/2tsp black pepper powder,1tsp roasted cumin powder,1tsp salt,1tsp saunf,1tsp red chilli powder,1/2tsp hing and 5tbsp sugar or jaggery powder.Now blend it.
3. In a glass jar put the puree,store it in fridge for 10-15days.Whenever you want to make,in a glass take 3-4tbsp mango puree,add chilled water,sugar and salt of your choice and few mint leaves.Mix it and drink.

JACKFRUIT PAKODA…RAW JACKFRUIT PAKODA…Homemade Jackfruit Pakoda..Crispy & Yummy Snack 😋😋
Method:
1. Take 250g cube sized cut jackfruit,in a cooker put it.Add 1tsp salt,1/2tsp turmeric powder,pinch of hing and 1cup of water,cook it for 2 whistles on medium flame and allow it to cool.Then strain it and keep it aside.
2. In a mixing bowl,take 3/4th cup of besan,4tbsp rice flour,2tbsp ginger garlic paste,1medium size chopped onion,pinch of ajwain,1tsp turmeric powder,1tsp coriander powder,1tsp chilli powder,1tsp garam masala,1tsp cumin powder,salt to taste,1-2 chopped green chillies and 10-12 coriander leaves(optional).By adding little little water make it into a thick paste.
3. Then add jackfruit and again mix properly.In a kadhai,heat the oil for deep frying.Then put one by one jackfruit pieces and fry till it turns into light brown colour.
Now yummy and crispy jackfruit pakoda is ready to serve hot 😋😋

SABUDANA KHICHDI…Non Sticky Sabudana Khichdi…Fasting Food…
Method:
1.Take 2cups of sabudana,put water 1 &1/2inch above the sabudana.Soak it for overnight.
2. In a Kadhai,take 4tbsp ghee.Fry half cup of peanuts,few cashew nuts and keep it aside.From peanuts,take half and crush it.
3.In the same Kadhai,take 1tsp cumin seeds,after crackling put 1medium size chopped onion(if you are eating fasting,then skip the onion and put 1inch chopped ginger),1-2chopped green chillies,10-15curry leaves,1medium size chopped tomato.Fry it,when tomato softs,add cube size cut potato(1medium size).Fry the potato till it cooks 60%.Then add soaked sabudana,fried peanuts,cashew nuts,1/2tsp black pepper powder,1/2tsp turmeric powder(optional),salt to taste and pinch of sugar.Mix all
4. Cook the sabudana on low flame till it becomes translucent.Lastly add half lemon juice and chopped coriander leaves.Mix and switch off the flame.
Yummy sabudana khichdi is ready to serve 😋

RICE PAPER MOMO…PAN FRIED RICE PAPER DUMPLING…VEG RICE PAPER MOMO..No Maida Momo
Method:
(For 15momos)
1.In a pan,take 3tbsp cooking oil.Add finely chopped garlic(2tbsp),1-2 green chopped green chillies.Saute for few seconds.Then add 1cup grated carrot,1cup finely chopped capsicum,2cups finely chopped cabbage.Fry it for 3-4mins on low flame.
2. Add 1tsp black pepper powder,2tbsp soy sauce and salt to taste.Mix all and fry for 1-2mins.Lastly add 3-4tbsp finely chopped spring onion,mix it.Then switch off the flame
3. Take one rice paper sheet( brand rice paper sheet I used,it’s available ) ,soak it in water for 5-10secs.Then take it out,put veg stuffing in it and fold it.Keep it on a oil greased plate so that it will not stick.Repeat the procedure.
4. In a pan,take 2tbsp oil.Put momo one by one,fry for 1-2mins.Then flip the other side,again fry for 1-2mins on low flame.
Now yummy rice paper momo is ready 😋😋.
