Co-owner of Yiro and all round great chef Billy is pulling together some of his favourite recipes to share! Here’s one for the BBQ ahead of this scorcher of a weekend. Can’t be arsed to cook your own? We’ll be at Skylight Rooftop Bar, ZSL London Zoo, Lloyd Park Market, Maltby Street Market and Victoria Park Market over the course of the weekend 😎 Come say hi!
RECIPE:
Per steak -
100ml soy sauce
Handful of mint
Handful of Thai basil
2 cloves of garlic
1 diced Scotch bonnet (if you like it hot!)
1/2 pod star anise (crushed)
1 tbsp wildflower honey
30ml mirin
1. Get a nice cut of steak (we recommend fillet, but if your budget can’t stretch go for sirloin or ranch).
2. Mix the ingredients for the marinade and marinate the steak for 24 hours or as long as possible.
3. Cook on the BBQ with the lid closed. Give 2 mins on each side, coating with the spare marinade as you cook. Repeat this 3 times (6 mins total cook time).
4. Serve and enjoy!
1 x FOH or grill chef needed for shift 5pm-11pm, tonight.
Either serving Greek wraps through busy service or batch cooking for service.
