Restaurateur Cai Ross from Paysanne in Deganwy is such a fan of North Wales, fish, and seafood that he wrote a cook book called…wait for it…North Wales Fish & Seafood (published by Graffeg). Now with his old pal Ed Brookes following him around with his fancy camera, Cai is going to take viewers around this stunning part of the world, making the case that the seafood in North Wales is some of the very best in the UK.
In this episode, Cai and Ed go oyster-crazy; specifically Menai oysters. Cai chats to oyster expert Rhianna from The School of Ocean Sciences in Bangor. Then it’s off to one of the best fishmongers in North Wales to grab a bag of them from oyster guru James Wilson, before shucking and tucking in with vineyard owner Colin from Gwinllan Conwy (plus a flute or two of his magnificent Welsh fizz).
