“Today I’m sharing a super easy, healthy and delicious recipe 😍👌

Start with 1 cup of rice, wash it well and cook it with salt and black pepper. Once ready, drain it and set aside.

In a baking dish, add diced zucchini, eggplant, onion, sweet pepper and chicken breast.
Drizzle with olive oil, cover with baking paper and bake for 30 minutes.

Remove the paper and let it roast until golden and flavorful 🔥

Take it out, add the cooked rice and mix everything together.

Final touch 😍👇
A fresh dressing: olive oil + lemon juice + salt + black pepper + cilantro & parsley.

Pour it on top… and enjoy a light, healthy and incredibly tasty dish 👌
