Subtext Coffee Roasters
An uncompromising specialty coffee roaster focusing on deeply flavourful, terroir driven coffees. We compromise on nothing.
No blends to hide lower quality coffee, no dark roast to hide coffee that lacks character. We source for quality and regional representation and roast for balance and to bring out the natural flavour of incredibly expressive, high quality lots. We have a team of coffee professionals seasoned in everything from roasting and brew recipes, to water formulation and cafe design.

Another last call on coffees from another inspiring producer. We’ve been sourcing coffee from Frank Torres for many years. Already inspired by how his coffees expressed, being able to visit his farm, Finca Indonesia, over the past few years struck us for being stunning and for the innovative, sustainable agriculture employed (turns out those things aren’t mutually exclusive 🌸🌱⛰️).
This year we sourced multiple nano lots of clean experimental processes. Some of the last of these are two Pink Bourbons, one processed as a washed Carbonic Maceration, and the other as a Hydro Honey. Both varietally articulate and expressive✨.
An innovator, community pillar, and incredibly hard worker, it’s hard to not get swept up in his vision for the future.
Honrado de poder representar otro año de tu trabajo 🫡

Only a little bit left from Francy Castillo’s Gesha online and Pink Bourbon at the roastery. We had the pleasure of returning to Francy’s farm, Uberrimo, last season. It’s a stunning showcase of organic, diverse agriculture with a multitude of varieties.
An amazing person doing inspiring work in the field and in her community, Francy’s coffees have had a place on our menu for the last 4 years. We’re always looking forward to sharing her work.
For this season, we also worked with Francy and to separate additional coffees from the local market - a project we’re excited to share more about soon.

Well UK, it’s been lovely. North to South, we’ve met so many inspiring coffee folk representing a contemporary wave of specialty coffee sensibilities. So thankful for the warm hospitable welcome we’ve received, from London to Sheffield. Leaving with big warm hearts and fondness for you all.
Special thanks to the good folk and for sharing their space and hosting us to share our work and perspective
